Tomato & Lemon Cod Paleo Wrap Recipe

I love fish, and knowing it’s one of the best proteins you can consume it makes the whole deal even better.  This is Dan from Primal4Life bringing you a “Tomato & Lemon Cod Paleo Wrap”.  And with a few simple Paleo upgrades, our cod dish can taste that much better, as well as be that much healthier for you!  How so?

Well by cooking up our cod in a fat or oil that resists oxidation, has more fatty acids, a higher smoke point, as well as tastes great and brings great flavor to your meals, that’s step one!  PrimalFat Coconut Ghee to the rescue!  Next up, we need seasonings that will bring out a little zing…. How about some turmeric, a little black pepper, lemon juice (not that it’s a seasoning but you know where I’m going with this!), and a great salt? Now, which salt to use?  It’s pretty simple: Quantum Pink Salt steps up to the plate, with no added fillers, binding agents, chemicals, or junk.  Just two great sea salts that bring you great flavor as well as trace minerals.  Salt is actually essential and needed; don’t cut it out of your diet….  Make sure you are using a quality salt like Quantum Pink Salt, and eliminate as much processed foods to cut back on the “bad” sodium.  Finally we are going to add a little exotic flavor to this dish, with the help from Julian Bakery’s Paleo Wraps!  These wraps are phenomenal; made with coconut, they are low in carbs and calories, contain medium chain triglycerides which are great for brain and heart health and to help with ketosis, and they have no GMO’s, gluten, grains, soy, starch or added salt.  Now this cod recipe doesn’t sound so boring, right?

Ingredients:

Tomato-&-Lemon-Cod-Paleo-Wrap-(18)

Directions:

1)      Melt PrimalFat Coconut Ghee in frying pan on low heat.

2)      Once melted, add cod, and allow to cook for a few minutes (longer if not fully thawed).

3)      Add tomatoes, lemon juice, and season with Quantum Pink Salt, ground black pepper, and turmeric.

4)      Cook other side of cod for a few minutes, season as you wish, and add more lemon juice.

5)      Finally, top with parsley, plate over your Paleo Wrap, and enjoy!

Doesn’t this sound delish?  Normally cod isn’t a fish that makes me scream out for joy, but with a mix of lemon, turmeric, coconut, and parsley I was thinking “hmm….”  This was a delicious meal that I thoroughly enjoyed, filled me up (although I did have a few macadamia and Brazil nuts afterwards with a little Coconut Manna), and all the while it was kept low carb and very nutritious!  The tomatoes were warm and juicy, while the cod was light and aromatic.  Simply delish!
