Spinach & Chicken Scramble On Paleo Bread™

This is Dan from Primal4Life bringing you a ”Spinach & Chicken Scramble Sandwich.”  This morning I’m looking for a very filling meal, as I ate light last night and also early… It’s been about fourteen-hours now, and a little intermittent fasting is good for you.  That’s the beauty of eating Paleo, eating good fats, eating until you are full… You can last longer in between meals, and there’s no need to count calories or worry about “fat making you fat”.  This meal is no exception, made with Coconut Paleo Bread™ from Julian Bakery and made from all natural ingredients.  Ingredients like coconut flour, apple cider vinegar, egg whites…  All real ingredients and also made in a gluten-free facility.  That puts a smile on my face when I am reading the label, as well as when I’m eating the bread itself!  I then made this sandwich with a couple locally farmed eggs, nothing but the best!!  Some dark chicken meat for added protein, and spinach and garlic as well.  We have a plethora of nutrients that will allow my body to recover, stay healthy, and be happy. 

Ingredients:

• 2 slices coconut Paleo Bread™

• Coconut oil

• 2 eggs

• 3 oz chicken – sliced up

• handful of raw spinach

• 2 garlic cloves – minced

• Salt and pepper to taste

Directions:

1)      Cook chicken in pan with coconut oil

2)      Cook Paleo Bread™ in toaster oven

3)      Add coconut oil to bread once slightly toasted

4)      Add eggs and spinach to chicken/pan and stir

5)      When toast is done, plate.

6)      Add minced garlic to eggs and season with salt and pepper

7)      Form your sandwich, or enjoy eggs with toast on the side

• 20 minutes

As I assumed, I am full and totally stoked after enjoying this tasty and nutritious meal.  The dark chicken is loaded with nutrients that are lacking in white meat, so I always opt for the thigh or leg.  Dark meat has been looked down upon for years, because it has fat and cholesterol.  Yet times have changed drastically where we are realizing that fat and cholesterol are essential.  We need to consume fat and we need cholesterol.  Sugar is the enemy, and this is why my sandwiches are based upon breads from coconut or almond flour, thank you Paleo Bread!  No grains to spike my blood sugar, no wheat to convert into sugar and jack up my cholesterol, and no inflammation.  Just feeling good, and keeping my cholesterol numbers in check, with a grain-free diet that includes healthy fats.  Ahh, the Paleo way, gotta love it! 

I hope you get a chance to try this meal out, it was fantastic!!  Healthy, tasty, yummy, it had it all!!!!  But what it didn’t have was all that bad icky stuff, like gluten, grains, and GMO’s.  Again, you gotta love it!!  So make sure you keep your freezer stocked with Julian Bakery’s Paleo Bread™; and until next time, stay Paleo and stay healthy!
