What happens when you combine Vegan cuisine with quality organic protein? You get Paleo! This is Dan from Primal4Life bringing you a “Scrambled Greens Paleo Wrap”. It’s true; Vegan and Paleo have a lot in common…. We share quality fats, tons of healthy veggies, fruits, nuts and seeds. This Paleo Wrap is a perfect example of how Paleo is a blend of Vegan foods, and quality organic proteins.
I start my breakfast with some Red Russian Kale, a great choice for smoothies, or to mix into your free-range eggs! It’s packed with vitamin A, vitamin C, vitamin K, beta carotene, and has some calcium as well as lutein. Next, I include some beet greens, I think they are something that a lot of folks overlook and toss out. They also blend up or cook up perfectly, and they also have vitamins A, C and K, as well as having antioxidant properties that neutralize free radicals in the body. A scallion, chopped up, for good measure…. And they give us anti-oxidants, vitamins and minerals, and even plant fiber. This is when I throw in my coconut oil, and it’s not just any coconut oil, it’s an organic, GMO-free Lemon-Herb Nuco Liquid Premium Coconut Oil. It has medium-chain-triglycerides, it helps lower LDL cholesterol and raise that good HDL cholesterol, its anti-bacterial and anti-fungal thanks to its Lauric Acid, and it’s one of the best brain foods which can also help with Alzheimer’s. This is where I sauté, and allow this blend of goodness to wilt down.
- Paleo Wrap
- Handful of Red Russian Kale
- A few leaves from beet greens
- 1 scallion, chopped
- 1 TBSP Lemon-Herb Nuco Liquid Premium Coconut Oil
- 3 organic eggs
- 2 cloves garlic, minced
- ½ TBSP organic hemp seeds
- Quantum Pink Salt and black pepper to taste
1) Saute Kale, beet greens and scallion with Coconut Oil
2) When wilted, add in salt, pepper, and then eggs.
3) Scramble eggs, add in garlic, keep mixing.
4) Add to Paleo Wrap
5) Top with organic hemp seeds
Eggs, from the farm, in their most natural state, are going to provide us with a ton of good stuff… Good stuff like vitamin D, lutein and zeaxanthin, carotenoids that support eye health, and are an excellent source of choline, essential for function of all cells in the human body. And don’t forget about the Omega-3 fats! With a little black pepper and some healthy Quantum Pink Salt, we’re getting even more nutrition. This isn’t your average table salt, this is a blend of pure Mediterranean sea salt and pink Alaea Hawaiian sea salt which supply critical trace elements. I add in some minced garlic, one of my favorite anti-inflammatory foods around. It also helps to prevent and treat colds, cancer, helps with heart disease, and reduces risk of osteoarthritis. Plus, I love the taste!!! And last but not least, some organic hemp seeds, which contain a healthy anti-inflammatory 3:1 ratio of omega-6 to omega-3 fat, and are rich in disease-fighting, plant-based phytonutrients and anti-aging antioxidants such as vitamin E.
Now that we have a wide array of nutrients, minerals, and flavors, we add all of this goodness to our GMO-free, soy-free, grain-free and fully organic Paleo Wrap! It’s low in calories, carbs, and has protein and fiber to keep you fuller for longer periods of time.
