Pumpkin Chicken Coconut Paleo Wraps

It’s that time of the year; fall is in the air, and leaves are turning color…  This is Dan from Primal4Life bringing you a “Pumpkin Chicken Chili Paleo Coconut Wrap.”  And to figure out what meal we were going with on this gorgeous autumn day, we opened up the Gather cookbook, which is broken down into different seasons and events.  “Harvest dinner” is the chapter that we would appropriately be looking at, and that’s when we spotted Hayley and Bill’s recipe “Pumpkin Chicken Chili”.  It looks fantastic, as do all of the photos in this exquisite cookbook which we scooped up from Julian Bakery… It sounds fantastic; pumpkin and spices is just so fitting and comforting right about now.  And, I think it’ll pair up just right with the Paleo Wraps!  Since we are hitting up a fair today, this is a perfect recipe that will give us another opportunity to put our slow cooker to full use while we’re gone.  Now that’s Paleo!

Not only is the recipe and the entire cookbook geared towards the Paleo lifestyle, obviously the wraps are too.  They were meant to be together…  Low inflammation, high quality organic foods, filled with nutrition that will keep us healthy and full!  And that’s exactly what this recipe is all about.  Putting a smile on our faces with each and every bite, while allowing us to realize how satiating it really was.

Ingredients (Pumpkin Chili Spice):

  • ½ tbsp onion powder

  • ½ tbsp garlic powder

  • 1 tbsp chipotle powder

  • ¾ tbsp ground cinnamon

  • ¼ tbsp smoked paprika

  • ½ tsp ground nutmeg

  • ¼ tsp ground ginger

Ingredients (Chili):

  • 2 tbsp Paleo Butter

  • 3.5 lbs chicken, skin removed and cubed

  • ½ large yellow onion, roughly chopped

  • 1 tbsp pumpkin chili spice (see above)

  • 1.5 green bell peppers, seeded and cut into bite-sized pieces

  • 16 ounces fire-roasted tomatoes (about 1 can)

  • 3 ounces tomato paste

  • 1 cup chicken stock

  • 7 ounces pureed pumpkin

  • Quantum Pink Salt & black pepper to taste

  • Paleo Wraps


  1. In a small bowl, combine the onion powder, garlic powder, chipotle powder, cinnamon, smoked paprika, nutmeg, and ginger to make the Pumpkin Chili Spice.  Set aside.

  2. Heat a large skillet over medium-high heat.  Add 1 tablespoon of Paleo Butter to the skillet, add half the chicken to the skillet, along with half of the onion.  Season with a quarter of a tablespoon of Pumpkin Chili Spice, and brown the chicken on all sides.  Transfer the chicken and onions to your Dutch oven / slow cooker.  Repeat the process in the skillet with the second batch of chicken, onion and spice.

  3. Heat the Dutch oven / slow cooker over medium heat, and add the green bell peppers, chicken stock, fire-roasted tomatoes, tomato paste, and pureed pumpkin.  Stir until all ingredients are combined.  Season with ½ tablespoon of pumpkin chili spice, salt, and black pepper.

  4. Bring the chili to a boil, turn it down to low, and cook for four hours.  The chili can simmer on the stove until time to serve.

  5. Serve with your Paleo Wraps, and enjoy!

Prep Time: 15 minutes

Cook Time: 4 hours

What a lovely meal on this gorgeous day.   We had a great time at the fair, and it was such a pleasure to come home to a great aroma….  The Pumpkin Chicken Chili was a wonderful, hearty meal that really did work in harmony with my Paleo Wraps.  I am a coconut fan, so I doubled up on the wraps, and I even tested out some Nutiva Coconut Manna melted into the chili as well.  Talk about a coconut lover’s dream!!!  The meal overall wasn’t over done with pumpkin.  Actually, the fire-roasted tomatoes were quite prominent, but the spices and the pumpkin puree were still part of the show.  I think chicken is a great protein for this meal, but you could easily swap in turkey or even beef chunks of you really wanted to.  Another Paleo benefit, meal planning is that much easier since vegetables, fats, proteins and condiments are so interchangeable.  Just keep ‘em healthy and Paleo!
