Primal Porktastic Frittata Combo

It’s combo night!  And I’m getting my Paleo Wraps and my Paleo Bread ready for a delicious frittata!  This is Dan from Primal4Life bringing you a “Primal Porktastic Frittata Combo.”  If you have been following these blogs recently you are probably guessing where this recipe came from….  One of my faaaavorite cookbooks ever; Beyond Bacon!  Stacy and Matthew did an impeccable job with this one, explaining the health benefits of pork, how to cook it, and some amazing recipes that will blow your socks off.  I picked this gem up at Julian Bakery, where I source a lot of my Paleo products!

This frittata is simply amazing….  And easy to make too!  We slightly modified the veggies in this one, and feel free to make it your own as well.  But I highly suggest you leave the main ingredients the same.  The pork with the soft, fluffy eggs and some coconut milk in there is just heavenly.  And we opted to go Primal with some crumbled goat-cheese as well, totally optional!


  • 12 eggs

  • ½ cup full-fat coconut milk

  • 1 lb Italian Sausage (loose)

  • 1 cup zucchini (sliced and diced)

  • 1 cup mushrooms

  • 1 medium red onion, diced

  • 2 garlic cloves, minced

  • 1 tsp fresh flat leaf parsley, chopped

  • 1 tsp fresh oregano, chopped

  • Quantum Pink Salt & black pepper

  • ½ cup crumbled goat cheese (optional)

  • Paleo Bread & Paleo Wraps


  1. In a large mixing bowl, beat together the eggs and coconut milk.

  2. In a skillet, brown the sausage over medium heat.

  3. With a slotted spoon, transfer the sausage from the skillet to a towel-covered plate.

  4. Drain the fat from the skillet, except for 2 tablespoons.

  5. Saute the zucchini, onion, mushrooms and garlic until the onion pieces are translucent, about 6 minutes.

  6. Return the sausage to the skillet, and add the parsley and oregano.  Stir to combine.

  7. Whisk the eggs and coconut milk together again until bubbly and frothy.

  8. Pour the freshly whisked mixture over the top of the sausage, and transfer the skillet to the oven.  Bake for 20 minutes at 400F until the top just starts to brown.

  9. Season with Quantum Pink Salt and black pepper to taste.

  10. (Optional) If you are adding goat-cheese, 10 minutes into baking, add goat cheese and press into mixture.

  11. Toast Paleo Bread and have Paleo Wraps ready to plate.

Prep Time: 20 minutes

Cook Time: 25 minutes

Serves: 6-8

Yet another uuuhhhmazing dinner, with tons of healthy fats, fresh veggies, and a great bread and wrap that are both low in calories, low in carbs, high in protein and fiber to keep you fuller longer, and also lacking GMO’s, gluten, grains, soy, and just about all of that nasty stuff that we are trying to avoid these days!  This meal was possible thanks to a wonderfully assembled cookbook; Beyond Bacon…. The ultimate wraps; Paleo Wraps!  And the best bread in the world; Paleo Bread!  

When I use the words “ultimate” and “best”, I mean it… I couldn’t eat a whole wheat wrap right now if you paid me… I wouldn’t have any “traditional” or even “gluten-free” breads without knowing that I’m probably going to feel horrible and sick very shortly afterwards… Why?  Because Julian Bakery has put together some healthy Paleo products that keep us Paleo, allowing us to feel good, and keep us moving closer and closer towards healthy.
