This is Dan from Primal4Life bringing you a “Low Carb Gluten Free Primal Grilled Cheese On Paleo Bread.” Waking up this morning, I had an urge for a grilled cheese sandwich… Haven’t had one in a while, so I figured it was long overdue. So after my morning ritual, drinking my H2O, doing some pushups, using my Ab Wheel, and taking a few supplements, I start this meal by getting my coconut Paleo Bread out of the freezer and into my toaster oven. Paleo Bread stays fresh in the freezer up to three months, which is pretty cool and convenient… I take it out, break off a slice, and the remainder lasts, and lasts, in that freezer. But to be honest, they really don’t last because I eat it up so quickly! After just a few minutes, I transfer the Paleo Bread to my grill pan, which has been buttered up with a touch of Paleo Butter, which is this incredible ghee that I get at www.JulianBakery.com/Paleo. It comes packed with nutrients and flavor that is hard to get otherwise, and it’s made from grass-fed cows, don’t worry because Julian Bakery wouldn’t skimp on that! Once the Paleo Bread has been cooking up for just a couple minutes with the delectable Paleo Butter, I flip the slices and see those beautiful grill marks, signifying that the slices have cooked up just right… Now, I add some Paleo Mayo that we made from the Well Fed Cookbook…. Oh yeah, we got that from Julian Bakery as well, in their cookbook section…. And you thought they just sold healthy bread… Ha! Mayo goes on both slices, and then I add a couple slices of organic mozzarella cheese (cause it doesn’t bother me….), some red onion, and a couple slices of fresh tomato. Sea salt and pepper for a little insurance on taste, and then we let it sit for a little longer, allowing the cheese to melt.
• 2 slices coconut Paleo Bread™
• dab of Paleo Butter for the grill pan
• Paleo Mayo – from the cookbook Well Fed
• 2 slices organic grass-fed mozzarella cheese (Make It Paleo With Almond or Coconut Cheese)
• A slice or two of red onion
• 2 slices fresh tomato
• Sea salt & pepper to taste
1) Defrost/Toast Paleo Bread
2) Spread Paleo Butter on grill pan
3) Place Paleo Bread on grill pan for a few minutes
4) Flip slices, add Paleo Mayo
5) Add mozzarella cheese to each slice, then red onion, tomato
6) Add salt & pepper to taste
7) Assemble sandwich and allow cheese to melt

What a wonderful way to start my day…. And I know I should sit, relax and chew my food well for proper digestion, but I cannot tell a lie. I wolfed this one down!!!!! It was so delicious, but with all healthy ingredients, I have no shame. Paleo Bread is low in carbs, low in calories, and also low in all the bad stuff that Rob Wolf suggests we stay away from; gluten, grains, soy, GMO’s, starch…. Pure awesomeness! And in a recent “Tweet”, Rob was asked his thoughts on Paleo Bread, and he called it a “solid snack option”. From the Paleo Guru himself, that speaks volumes on Paleo Bread, especially since Twitter limits how much you can “Tweet”. If you want my personal experience and opinion, I cannot consume any other bread…. With my autoimmune issues, Paleo Bread is the only bread that doesn’t give me a massive headache, doesn’t cause G.I. issues, and doesn’t make me feel like I need to rip my skin off…. I may not be Rob Wolf, but I have some serious experience that made me find Paleo, as well as Paleo Bread, in order to feel normal again….
