Paleo Zero Carb Rice & Chicken Recipe

If you are looking for a recipe that has some incredible flavors, great taste, and falls into the Paleo category; look no further!  This is Dan from Primal4Life bringing you ”Chicken with Cilantro and Plantain Miracle Rice”, out of the cookbook OMG That’s Paleo?  by Juli Bauer.  Yet another slammin’ meal from Juli’s book, surprise, surprise!  No really, we aren’t shocked at all; every meal thus far has been nothing short of incredible.  We decided to slightly modify this one since we have some Paleo Rice AKA Miracle Rice on hand, fresh from Julian Bakery.  It’s healthy, has zero calories, no sugar, no starch, no gluten, no soy, and is very easy to make!  And in this case it’s definitely easier to make compared to “riced cauliflower”, in case this recipe sounds complicated for you.  And yes, the same Julian Bakery that came out with Paleo Bread now offers awesome cookbooks like this, along with many, many other Paleo items.  Watch this!

• 1 lb chicken, diced

• 1 tsp garlic powder

• 1 tsp onion powder

• 1 garlic clove, minced

Himalayan Salt and pepper to taste

• 2 tbsp Paleo Butter

Ingredients (for the Plantain Miracle Rice):

• 2 bags Miracle Rice / Paleo Rice

• 2 plantains, peeled and diced (get the brown ones)

• ½ cup cilantro, roughly chopped

• ½ cup chicken broth

• 1 garlic clove, minced

• 1 tsp garlic powder

• 1 tsp onion powder

Himalayan Salt and black pepper to taste

Ingredients (for the avocado sauce):

• 2 avocados

• 3 tbsp olive oil

• 2 tbsp water

• ¼ cup cilantro, roughly chopped

• juice of 1 lemon

• juice of ½ lime

• juice of ½ orange

• ½ tsp garlic powder

Himalayan Salt and black pepper to taste


1)      Plop 2 tablespoons of Paleo Butter into a medium-large skillet over medium heat and add the diced plantains.  The plantains will take about 7-9 minutes to cook on all sides, so continuously toss them to keep them from burning and sprinkle in just a pinch of salt.  Once the plantains are cooked, place on a paper towel-covered plate to soak up the excess fat.

2)      In the same skillet, add in 2 more tablespoons of Paleo Butter, along with a minced garlic clove to the pan.

3)      Once the garlic becomes fragrant, add the chopped chicken to the pan, being sure not to overcrowd it.  You want the chicken to get a nice crust on the outside.  Sprinkle with the rest of the garlic and onion powder and a bit of Himalayan Salt and pepper.

4)      After about 2-3 minutes, flip the chicken to cook on the other sides, only moving around the chicken a little bit to keep that crust going.

5)      While the chicken is cooking, rinse the Miracle Noodles in a strainer, put in microwave safe dish & microwave on high for 2 minutes and then strain it.  Put back into dish & microwave again for 2 minutes and strain it again, and then put back into dish & microwave again for another minute.  (Or you can follow the cooking directions on Miracle Rice package which require boiling.)

6)      Mix ½ cup of chopped cilantro, 1 tsp garlic powder & 1 tsp onion powder into the Miracle Rice, along with the diced plantains and a bit more Himalayan Salt and pepper. If Miracle Rice seems dry, add 1-2 tablespoons chicken or vegetable broth.

7)      Make the avocado sauce by adding all ingredients to a food processor and pureeing until smooth (about 2-3 minutes).

8)      Serve chicken along with Miracle Rice and top off with the avocado sauce.  Love life. Smile.  Plantains are amazing.

She’s right.  Plantains are amazing, and so is this recipe!  Rachel and I both seriously loved this one, I think this is the best meal thus far out of OMG That’s Paleo? to be honest.  And it was Rachel’s first time with plantains.  Not only did she try them, she enjoyed them, and what a meal to enjoy them with!  We are so glad that we are trying new foods, new books, new items like the Miracle Rice and Himalayan Salt; all available through Julian Bakery and their Paleo section.  Well, not the plantains, but if you want a heck of a super fruit you should really check out the goji berries and golden berries!
