Paleo Veggie & Bacon Scramble with Coconut Paleo Bread™

So for my first breakfast on the Paleo Diet, I decided to create a Paleo Veggie and Bacon Scramble w/ Coconut Paleo Bread on the side. I even cooked it myself and didn’t have the culinary hands of my beautiful wife to assist me. I wanted to start off simple and inexpensive yet tasty for my first dish. It was quick and painless. I can see that I am going to enjoy this menu much better than my strict vegetarian one! Let’s get started.

 Ingredients:

  • ½ tbsp of coconut oil
  • 3 large organic cage free eggs, scrambled
  • 1 slice Coconut Paleo Bread, toasted in coconut oil
  • 1 slice APPLEGATE Organics® uncured, nitrate-free turkey bacon, diced
  • ¼ organic large zucchini, sliced
  • ¼ organic red bell pepper, diced
  • ¼ organic yellow bell pepper, diced
  • ¼ organic white onion, chopped
  • ½ organic avocado, sliced
  • Pinch of Real Salt® Sea Salt
  • Organic ground black pepper

  Directions:

  1. Cook 1 slice of turkey bacon in frying pan over medium heat until fully cooked.
  2. Also, add ½ tablespoon coconut oil to another frying pan and brown Coconut Paleo Breadon both sides.
  3. At same time, heat ½ tablespoon of coconut oil in a separate frying pan over medium heat. Add veggies.
  4. Sauté the veggies for 3 minutes or so.
  5. In a small mixing bowl, whisk the eggs.
  6. Pour the eggs over the veggies and stir frequently until fully scrambled.
  7. Dice fully cooked bacon and add to veggies in pan.
  8. After plating, top with sliced avocado.
  9. Season with a dash of sea salt and black pepper. 

Prep Time:

  • 10 minutes

Cook Time:

  • 4-6 minutes
