To sandwich or to wrap, that is the question… This is Dan from Primal4Life bringing you “Paleo Tuna Salad Two Ways”. We’ve been busy in the kitchen all morning, prepping for today’s festivities and for our guests. And finally, it’s time to make breakfast! Or would this be brunch at this point? Whatever, its chow time! As I reach for a can of wild caught tuna, Rach realizes she could go for the same tuna salad that I’m about to make. Although she decides that it would be better (for her) in a Turmeric Paleo Wrap, while I’m craving a sandwich using a couple slices of toasty and crunchy Almond Paleo Bread. Both are healthy, both lack GMO’s, gluten, and grains, and both are low in carbs and calories. But they are oh so different!
We start off with that can of wild caught tuna from Wild Planet, combined with some crispy organic bacon from Applegate, homemade Paleo mayo, crunchy celery, and some salt and pepper to give it a little zip. Rach actually wanted more zip, so she went with a chipotle mayo from Sir Kensington, now I want to one up their recipe and make my own… Next time, Sir Kensington, we shall meet again…. A couple fresh eggs from the farm make their way into this one, along with some fresh greens as well.
- 2 slices Almond Paleo Bread
- 1 Turmeric Paleo Wrap
- 1 can wild caught tuna
- 2 hardboiled eggs, chopped
- 2 celery stalks, chopped
- ½ tsp organic mustard
- 5 strips organic bacon, chopped
- 3 TBSP Paleo Mayo
- 1 tsp Sunfood Superfoods Fine Himalayan Salt
- 1 tsp ground black pepper
- Greens of your choice
- Cook bacon to your liking, we went crispy, then chop into small bits when done and place in a medium sized bowl.
- In that same bowl, add tuna, hardboiled eggs, celery, mustard, mayo, salt and pepper; mix well.
- Toast Paleo Bread to your liking, then plate along with Paleo Wrap.
- Add greens to your Paleo Bread and/or Paleo Wrap, I added baby spinach, while Rachel added Romaine lettuce.
- Top with tuna salad mixture, and dig in!
