This is Dan from Primal4Life bringing you a ”Tomato, Egg & Sauerkraut Breakfast Sandwich.” After a week of being away from home on a trip, I totally am craving another Paleo Bread™ sandwich!! I cannot wait to get right to business here; with a couple slices of the low-carb, gluten-free, NON-GMO coconut Paleo Bread™. I’m looking to top this one with some fresh ingredients, as natural as possible, like some locally raised eggs that are hormone and antibiotic free… cause we don’t want any of that! Some fresh sauerkraut filled with probiotics to promote good gut-flora, and keep us healthy and happy…. A sliced up clove of garlic for some anti-inflammatory properties, to keep those nasty bugs away! And a thick slice of tomato for some lycopene and other beneficial nutrients to give us that extra edge that we all need. And to add the benefits of the Paleo Bread™, like healthy fats from the coconut oil, and protein and fiber to keep us fuller longer and able to perform, we have a sandwich that should be considered a super-food!
• Coconut oil to fry eggs
• 2 eggs
• 2 slices coconut Paleo Bread™
• 2 tablespoons Sauerkraut
• 1 thick slice tomato
• 1 garlic clove, sliced thin
• Salt and pepper to taste
1) Cook Paleo Bread™ to your liking
2) Heat pan, and add coconut oil
3) When coconut oil is melted, add eggs and cook to your liking
4) Add garlic slices depending on how you want your garlic cooked (I prefer raw for added benefits)
5) When toast is done, plate, and add your eggs/garlic.
6) Add tomato slice
7) Add sauerkraut
8) Add salt and pepper to taste

• 10 minutes
When this sandwich was fully assembled, I couldn’t wait to take a bite… It looked so good, and knowing that it was made with all healthy ingredients, it made me crave that first bite even more. And it didn’t help that I got my Paleo Bread™ toasted to perfection, nice and crispy with the dark edges just the way I like it! I finally got my first bite, and it was a host of different textures, flavors, and yumminess! Crispy bread, juicy tomato, spicy garlic, fresh eggs, and tasty sauerkraut, all in one! Oh yeah, score!!!!
I am so glad that Julian Bakery came to the rescue, I found them about a year ago and ever since I have been able to enjoy sandwiches again. After a year of being Paleo, I thought I was doomed, as there was nothing out there that allowed me to enjoy a tasty bread, but also one that didn’t make me suffer the consequences of my auto-immune issues….
