Paleo Sweet & Nutty Meal Mash

This is Dan from Primal4Life bringing you a ”Sweet & Nutty Mash.”  As I cook my sunny side up eggs, along with some tomato, avocado, and almond Paleo Bread, I realize that I really taxed my body yesterday with a hard workout… I need to refuel, and it’s been ages since I enjoyed a sweet potato.  So, I say “Why not?”  For anyone looking to pass on the carbs, I suggest you focus on the eggs, tomato, avocado and Paleo Bread, as those are all low in carbs, and still extremely nutritious.   The beloved sweet potato on the other hand, is definitely a carb monster, and for me it’s a treat.  Especially this one!!!!   We are going to enhance the flavor and nutrition drastically, using just a few ingredients.  One of which you can get through Julian Bakery while you are ordering up your Paleo Bread™!  It’s one of my favorite items in my pantry, I love to snack on it, eat it with my Paleo Chocolate (coming soon to Julian Bakery online!!!), and also melt it into certain foods…  Just like this one!   It’s the infamous Coconut Manna, made by Nutiva, a brand you can trust just like Julian Bakery!  This stuff will melt in your mouth, AND in your hand…  It’s soft, tasty, delicious, and will enhance just about any food that you combine it with.  And today, I am melting it into my “Sweet & Nutty Mash.”  So let’s see how this comes together.  I will skip the instructions on how to make the eggs, tomato, avocado and Paleo Bread…. If you need help with making those, that’s a lesson for another day.

Ingredients:

• 1 Sweet Potato

• 1 Banana

• 1.5 Tablespoons Nutiva Coconut Manna

• ¼ cup crushed Walnuts

• 2 Teaspoons Cinnamon

Directions:

1)      Microwave (or cook if you have time) sweet potato until soft.  It took me 7 minutes.

2)      When soft, mash in a bowl.

3)      Add a banana to bowl, and mash into sweet potato.

4)      Add cinnamon.

5)      Add Nutiva Coconut Manna

6)      Add walnuts

7)      Keep mashing until fully blended.

8)      Warm up some more, I microwaved it for another minute.

• 4 minutes

Cook Time:

• 10 minutes

• 1-2

Anyone that loves sweet potatoes will love this one, as you get quite an upgrade…. Through the sweetness of the banana, the slight spice from the cinnamon, to the creamy and deliciousness from the Coconut Manna…  It blended together so well, creating a harmonious part of my healthy breakfast.  My eggs, tomato, avocado and almond Paleo Bread™ were happy to work together with the mash, and I was pleased to work with them!
