”Paleo Spiced Coffee Chicken.” Years ago I saw a steak recipe that called for coffee grounds, and I was like “What???” Thankfully I was born with an open mind, at least I think so, and I tried it. That steak came out incredible, and everyone that tried it loved it as well. Tonight’s chicken dinner is headed into that direction, with a light coffee coating combined with some spice. I didn’t want to go all out just yet, but after enjoying this meal, I think next time I will go with a stronger coffee blend, perhaps an organic espresso… Think of this as phase 1.
First things first, I coated the entire chicken with the Original Flavor Nuco Liquid Premium Coconut Oil, to help the spices stick. It’s a non-GMO organic coconut oil that comes in three wonderful flavors. There is the Garlic as well as the Lemon Herb, both are out of this world, but for tonight’s chicken I wanted the coffee/spice blend to be the main attraction; which is why I stuck with the original flavor coconut oil. Next up, the spice blend starts off with some Paleo Powder, a light sprinkle over my chicken went a long way, and I probably used a total of a tablespoon. Then, I followed up with some organic coffee, decaf for me, since I am very sensitive to caffeine and I’d like to be able to sleep tonight. I also used about a tablespoon for the coffee, like the Paleo Powder. If you prefer a stronger coffee taste, which I will venture towards next time, I’d double that to two tablespoons. Finally I added some Himalayan Sea Salt and black pepper, fired up my grill, and let it sizzle.
• 1 whole chicken
• Original Nuco Liquid Premium Coconut Oil – to cover chicken
• 1 tablespoon Paleo Powder
• 1 tablespoon organic decaf coffee
• Himalayan Sea Salt & Black Pepper to taste
1) Cover chicken with Nuco Liquid Premium Coconut Oil
2) Sprinkle Paleo Powder all over chicken, if you desire more spice, add more.
3) Sprinkle coffee all over chicken, if you desire more coffee taste, add more.
4) Add salt and pepper.
5) When grill is ready, transfer chicken to grill and cook until internal temps reach 165 F.

Who am I kidding, this serves four? No way…. Not when I’m eating over, I devoured three-quarters of this chicken and I cannot wait to make it again. Next time I’m definitely loading up on the Paleo Powder as well as the coffee, to give this bird a nice kick! Which also gives me an idea for Paleo Bread, hmmm…. Spiced Coffee Coconut Paleo Bread, why didn’t I think of that sooner!?!?!? Well, my slice of coconut Paleo Bread was still delish as is, and I am happy to admit that I had bread… Bread that lacks soy, wheat, gluten, grains, GMO’s, dairy, and is low in calories, carbohydrates, and is packed with protein and fiber.
