Paleo Slow Cooked Chicken and Veggie Recipe

This is Dan from Primal4Life bringing you ”Paleo Slow Cooked Chicken and Veggies.”  Today I’m going to experiment with our slow-cooker, aka the “Crock-Pot.”  Normally my wife tosses a few tasty ingredients into this bad boy mid-morning, and by dinner we have a super tasty feast.  But since I’m on my own this week, this will be my first go at it…. So let’s see how I do!  How tough can it be? 

Starting this recipe off, I decide to use a tablespoon of one of my new favorite items in my pantry; Paleo Butter!  It’s very tasty and healthy for you… Giving you CLA, vitamins A, D, and K2, and coming from grass-fed cows, it’s one of the most powerful ingredients that I stock now.  Once melted up in the crock-pot, I add in my chicken breasts, some Coconut Aminos, which is another staple of mine… Packed with a ton more nutrition than soy sauce, and doesn’t mimic estrogen levels like soy.  It’s a no brainer and an easy, healthy switch.  Then, some grated ginger, string beans, a huge Portobello mushroom, Kalamata olives, minced garlic, and chicken stock – all go into the crock-pot as well to make this a very tasty meal.  Oh, and the basics too; Celtic sea salt and ground black pepper!  Once we let this cook on low for about five hours, we’re done!   Wait, no we aren’t done!  My meal is never done unless there’s some Paleo Bread!  Especially with a dab of the wonderful Paleo Butter!  Now that I can enjoy bread again and not suffer the consequences, I’m enjoying it!!!  And to simplify things for you, all of these specialty items are easy to find, at www.JulianBakery.com/Paleo !!!!  The Paleo Butter, the Coconut Secret – Coconut Aminos, the Paleo Bread, and many more healthy items as well are all located in the jam-packed Paleo section at Julian Bakery, online and in the store.

Ingredients:

• 1.5 tablespoons Paleo Butter

• 4 chicken breasts (or thighs if you prefer)

• 1/8th cup ground ginger (fresh if possible)

• 1.5 cups green beans

• 1/3rd cup Kalamata olives

• ¼ cup Coconut Secret – Coconut Aminos

• ½ tablespoon ground ginger

• 1 large Portobello mushroom

• 1 cup chicken stock

• Sprinkle of Celtic sea salt & black pepper

• 1 slice almond Paleo Bread™

Directions:

1)      Melt 1 tablespoon Paleo Butter in crock-pot

2)      Once melted, add all items (except Paleo Bread) into crock-pot

3)      Let this cook for about five hours, or until chicken is fully cooked

4)      Cook Paleo Bread™

5)      Add Paleo Butter to toast when done

6)      Plate all items, and serve.

This couldn’t have been easier to make, well it could have… Perhaps a drive-thru, but then we toss the entire idea of this being a healthy meal out the window!  But seriously, toss the ingredients in the crock-pot, and tada!!!  Done!!!!!!!!  And, I get to enjoy my Paleo Bread with that rich and creamy Paleo Butter on the side, ahhhh….. It’s a perfect way to end my long day at work, and a nutritious way too!
