Three of my favorite things go into tonight’s dinner; smoky spice, dark meat, and bacon! This is Dan from Primal4Life bringing you ”Bacon-Wrapped Smoky Chicken Thighs” from Practical Paleo. Tonight’s dinner started off with the question “What can we do with these chicken thighs?” A few ideas got tossed around, but when we got serious we opened up Practical Paleo, by Diane Sanfilippo we knew what was up. It’s one heck of a Paleo cookbook that has a ton of fantastic recipes, as well as a nice Paleo write-up that everyone should read, learn from, and enjoy. I flipped through the “Poultry” section and stumbled onto this recipe and the words “bacon” and “smoky” grabbed my attention…. I love spices, especially smoky ones. I love bacon, I mean really – who doesn’t? And I love me some dark chicken meat… Don’t get me wrong, we can whip up some mean chicken breast recipes, but I’m a thigh and leg guy. Plus, dark meat has way more nutrition and healthy fats.
So this recipe calls for two teaspoons of Diane’s “Smoky Spice Blend”, which I modified slightly with the addition of some Paleo Powder; a great blend of spices that bring just about anything to life… Which is why I am adding it into this dish right here! Once my spice blend is together, I lightly coat my chicken thighs, wrap each thigh with bacon, and then I finish off the bacon-wrapped chicken thighs with a little more of that spice blend. Finally, I bake this delish dish in my oven at 375 F. Practical Paleo calls for 40 minutes, but I used boneless thighs and called it quits after 30 minutes, once my thighs reached an internal temperature of 165 F.
Ingredients (for the Smoky Spice Blend):
• 1 tbsp chipotle powder
• 1 tbsp smoked paprika
• 1 tbsp onion powder
• ½ tbsp cinnamon
• 1 tbsp Sunfoods Super Foods Fine Himalayan Crystal Salt
• 1 tbsp Paleo Powder
• 1/2 tbsp black pepper
Ingredients (for the chicken thighs)
• 4 bone-in, skinless chicken thighs
• 8 slices of bacon
• 2 tsp Smoky Spice Blend
1) Add all spices together in a bowl to make the Smoky Spice Blend
2) Preheat oven to 375 F
3) Sprinkle the chicken thighs with one teaspoon of Smoky Spice Blend.
4) Wrap each thigh in two strips of bacon.
5) Sprinkle the chicken with the remaining Smoky Spice Blend, and bake for approximately 40 minutes or until the internal temperature of the chicken reaches 165 F.

Yields: 4 chicken thighs (2 servings)
Whoooo hooooo!!!!!!!!!!!! What a great bunch of flavors that are in that Smoky Spice Blend. Combined with the bacon, and that awesome mixture of Paleo Powder and Himalayan Crystal Salt from Julian Bakery, we have a dinner that kicks! Remember, if you use bone-in, follow Diane’s recipe exactly. If you use boneless, make sure you check the chicken temps sooner….
