This is Dan from Primal4Life bringing you ”Paleo Noodles with tuna and olives.” Yet another special feature blog, with a brand new item from Julian Bakery! Here we have Paleo Noodles, made from coconut flour and Konjac root. Konjac root is new to me, but using the power of Google I searched it up, discovered that it is a plant, typically from Asia, and it’s also a perennial. Interesting… They also state that it is referred to as a yam, but there is no relation to the tuber family. Very interesting…. Well I don’t really mind what it is related to now that I’ve gotten the chance to taste these noodles, because they taste great! And better yet, I feel fine after consuming them! With only 15 calories and 2 carbs per serving, even someone looking to slim down has the winning advantage with Paleo Noodles. My biggest dilemma was what to pair it with! I decided to try noodles with tuna, kalamata olives, minced garlic, olive oil, and lemon zest. In the end, it was a winning combination that filled me up, and rates high in the health department.
• 1 portion Paleo Noodles™ (Gluten Free & Low Carb)
• 5 oz Tuna
• 1 Tablespoon olive oil
• 5 kalamata olives, chopped
• 2 garlic cloves, minced
• Lemon zest
• Salt & pepper to taste
1) Open package of Paleo Noodles and rinse.
2) Add noodles to boiling water for one minute.
3) When minute is up, rinse, and then dry with paper towels.
4) Add to bowl, with tuna, chopped kalamata olives, minced garlic, and lemon zest.
5) Add olive oil, and mix well.

I really enjoyed this dish, as it was filling and tasty at the same time. I was able to get a host of nutrients in my system, while trying something new… Konjac root!! Do I get a star on my chart now? No? Oh well, I’m still psyched to add Konjac root to my arsenal of healthy ingredients that I can incorporate into my Paleo lifestyle. And, it really wasn’t a big issue, as it tastes very mild in flavor, even the pickiest of eaters wouldn’t balk at these… Tell them they are regular noodles, rice noodles, whatever… But after they are done, tell them Julian Bakery sent ‘em….
