Paleo Mickey Pancakes Recipe (Keto / Low Carb / Grain Fee)

Did you know Mickey Mouse went Paleo?  He did now!  This is Dan from Primal4Life bringing you “Paleo Mickey Pancakes”.  When Alessia asked for pancakes this morning, I jumped right into my pantry and grabbed my Paleo Pancake and Waffle Mix from Julian Bakery.  It’s an easy to make pancake and waffle mix that is gluten and grain free, has no soy or wheat, and is a much healthier alternative to conventional mixes.  How easy is it to make?  This easy!  Empty Paleo Pancake and Waffle Mix into a bowl, add water and some melted coconut oil or butter, mix well, and cook ‘em up!  See, eating clean doesn’t have to be a challenge…  And by using our Mickey Mouse pancake maker, Mickey’s gone Paleo too!

Yes, it’s really that easy to get your kid to enjoy a Paleo version of pancakes!  They honestly can’t tell the difference, they are enjoying a very scrumptious pancake that’s kept low carb while getting quality proteins from egg whites and almond flour, along with other healthy ingredients like cinnamon and sea salt.  To be exact, each serving has just six net carbs, nine grams of protein, and one hundred and seventy calories.  Sounds great to me!  And this pancake mix isn’t going to send my daughter’s blood sugar and insulin levels into la-la land, thanks it being made from nutritious almond flour and cinnamon which keep those levels stable.

Ingredients:

  • Almond Flour
  • Dried Egg Whites
  • Vanilla Extract (Pure & Unsweetened)
  • Potassium Bicarbonate
  • Stevia
  • Cinnamon
  • Sea Salt

Directions:

1)      Take 4 TBSP of Grass Fed Organic Butter or Coconut Oil Mix Entire Bag with dry mix and mix with 8 oz of water and 4 TBSP melted butter or coconut oil.

2)      Cook warm butter or coconut oil in a large skillet over medium heat. Ladle 1/2 cup batter onto skillet. Pancakes will form little bubbles, when bubbles open, flip pancakes over and cook other side.

3)      Remove from heat to a plate. Repeat process with remaining batter, adding more butter or coconut oil to your skillet as needed. Note: Grass Fed Organic Butter is Primal Paleo Is The Coconut Oil Option

Since we are using PrimalFat Coconut Ghee as our butter of choice, we have a nice blend of grass-fed ghee along with healthy coconut oil.  Don’t worry, it’s still Paleo, since its lactose free.  And it also contains short and medium-chain fatty acids, which I try to include in my child’s diet as often as I can.  No processed trans-fatty vegetable oils here!  Another healthy and simple swap: Nature’s Hollow Sugar Free Maple Flavored Syrup.  This is a sugar-free alternative that is also extremely low in carbs; do you see a trend here yet?  Go ahead and look at your average maple syrup and you’ll see a TON of sugar and carbs, does your child really need that?  Not really… And with Xylitol you’ll be happy to know that it’s beneficial for tooth and gum strength as well as helping their gut flora.
