Paleo Low Carb Gluten Free French Toast with Paleo Bread™

Here is  my latest breakfast named Paleo French Toast with Almond Paleo Bread™. I am really enjoying the Paleo Bread™ – Almond variety. So far, I can make any type of sandwich or any dish that I am used to with it. And let me tell you, I have had my fair share of bread over the years. That is how I reached 250 pounds I guess you could say. So having this type of bread and not gaining the weight or having the glucose “letdown” feeling, is heavenly. Every day I try to think of another way to use this Paleo Bread whether it’s the main staple, like this French Toast or it’s just a compliment to a dish. I haven’t even gotten into the Carb Zero™ or Smart Carb™ Breads at all. I can’t wait for that. Maybe next week, I’ll give it a whirl. Anyways, let’s get to this meal for today.


  • 2 slices of Almond Paleo Bread or Coconut Paleo Bread
  • 1 cup of organic egg whites
  • ¼ tsp cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp pure vanilla extract
  • 2 tbsp coconut milk
  • Dash of sea salt and black pepper
  • Organic raspberries
  • 1 organic egg, over easy


  1. Mix egg whites, cinnamon, nutmeg, coconut milk, vanilla extract, sea salt in small rectangular Pyrex® bowl
  2. Soak each slice of Almond Paleo Bread in the egg mixture for 2 ½ minutes on each side to allow for absorption
  3. Toast the bread in a small frying pan for approx. 2 minutes per side
  4. Plate the French toast and garnish with cinnamon and raspberries
  5. In another small frying pan, cook the egg in coconut oil until over easy
  6. Plate the egg, sprinkle black pepper on egg and serve!

*You may add raw, organic honey if it is too dry

  • 12 minutes+
