This is Dan from Primal4Life bringing you a ”Coconut MeeNut Kiwi and Bacon sandwich.” As the snow began to fall here in Connecticut, I decided to slow-cook a full batch of bacon. They claim that bacon, even the aroma of bacon, releases dopamine, making you happy… Well, it’s quite true!! I am pretty happy right about now! I am also happy due to the fact that I can consume such a delightful sandwich, and not feel guilty. The lack of guilt is due to Julian Bakery and their quest for providing us the healthiest, most natural foods around. How delightful was this sandwich? Very… The bacon ended up with a nice coating of cinnamon, then I got out the Paleo MeeNut Butter, a perfect blend of four nuts; Almonds, Walnuts, Pecans and Macadamia Nuts. If you haven’t tried it, what are you waiting for??? Next up, a kiwi, no explanation needed there, you know it’s good for you. And finally, some coconut! I opted for coconut Paleo Bread and also Coconut Manna, both go well together and I thought they would be harmonious with the other ingredients.
• 2 slices Paleo Bread™
• 3 slices Nitrate-Free Bacon
• 1 Tablespoon Paleo MeeNut Butter
• 1 Kiwi – peeled and sliced
• 1 Tablespoon Coconut Manna
1) Cook bacon to your liking, I prefer to slow cook it for 2 hours. Make sure to sprinkle cinnamon on both sides of bacon…. Several times if you really love cinnamon!
2) Cook Paleo Bread™ to your liking
3) Melt Coconut Manna onto bread
4) Add kiwi slices
5) Add bacon
6) Add Paleo MeeNut Butter
7) Assemble, and enjoy!

• 2 hours (depending on how long you like to cook your bacon).
It really didn’t take me long to consume this one, I just couldn’t stop! The different tastes and textures worked well together. The perfect char on the Paleo Bread™ was great and gave it that crispy crunch as I bit into the sandwich. The Paleo MeeNut Butter oozed and tasted terrific with the cinnamon encrusted bacon. And the kiwi and Coconut Manna also meshed well together, I especially love how it melts. This was a sandwich for the record books, and I plan on recreating this one in the very near future. If you aren’t a fan on of one of the ingredients, feel free to substitute to fit your liking… but please, keep it healthy!
