Paleo Harvest Soup w/ Coconut Paleo Bread™

So my beloved family cooked this meal for me tonight and I absolutely loved it! Seeing what went into it, I really didn’t think I would like it but the dish did not disappoint. I thank my wonderful family for helping me out with this one. This soup and bread combo really did fill me up. I can’t wait for tomorrow’s meals to come. It hit me tonight that my pain has not been as bad at all and I am so thankful for that. Is it the diet? Who knows but I will take it. I would like to think that it is. Alright, let’s get started because this one’s a biggie.

 Ingredients:

  • 3 organic carrots, chopped
  • 8 slices organic bacon, chopped for garnish
  • 1 large organic onion, chopped
  • 3 organic granny smith apples, peeled, cored and chopped
  • 1 pound organic butternut squash, peeled and cut
  • 1.5 pounds organic sweet potatoes, peeled and cut
  • 4 stalks organic celery, chopped
  • 2 organic turnips, peeled and cut
  • 3 organic carrots, chopped
  • 3 sprigs organic thyme
  • 4 cups chicken broth
  • 2 cups filtered water
  • Sea salt and black pepper to taste
  • Organic cilantro for garnish
  • 6-8 slices of Coconut Paleo Bread, toasted

 Directions:

  1. In a large pot, cook the bacon over medium-low heat, stirring occasionally, until crisp, about 10 minutes
  2. Using slotted spoon, transfer the bacon to a paper-towel-lined plate
  3. Discard all but about 3 tablespoons of the bacon grease
  4. Add the onion to the pot and cook over medium heat, stirring, until soft, about 8 minutes
  5. Add the chopped apples, squash, sweet potatoes, celery, carrots, turnips and thyme sprigs
  6. Cover and cook, stirring occasionally, until crisp-tender, about 15 minutes
  7. Stir in the chicken broth and the 2 cups of water, cover, bring to a simmer and cook until the veggies are softened, about 10 minutes
  8. Discard the thyme sprigs, season with salt and pepper to taste
  9. Using an immersion blender, puree the soup
  10. Serve the soup into bowls
  11. Top the soup off with bacon and cilantro
  12. Now toast the Coconut Paleo Bread for everyone and serve!

  • 25 minutes+

Cook Time:

  • 45 minutes

Serves:

  • 6-8 people

 Now this particular meal, you’re gonna want to prepare ahead of time. There is a lot of chopping and preparing the veggies before even the cooking begins. Tell the family to go to the park or something constructive while you are in the kitchen. Hopefully, this creation sounds good to you because I sure liked it.
