Paleo Ham & Egg Cups Recipe with Paleo Bread™

 I am so thrilled to share another savory breakfast idea for Paleo Ham & Egg Cups that I made for this morning’s meal. This dish included a side of Coconut Paleo Bread from the Julian Bakery. I also chose to use the Paleo Powder™ on the Ham and Egg Cups. This was my first time using the powder on my eggs and let me just say that I am so glad I did. You can actually make this dish for the whole family but I chose to partake on my own this time. I know, it’s selfish but I had to sacrifice myself first.

 I also wanted to give you an update on how I have been feeling over this past week. The pain in my right side still comes and goes but it is nowhere near what it was. I still have not pinpointed the cause but I do know it is inflammation or high acidity related somehow. It usually dissipates upon waking and slowly comes back towards bedtime. As soon as I feel it coming on, I take 2 chewable Acid Relief with Enzymes™ by NOW Foods® to relieve some of the acid discomfort. It tends to help it alleviate quicker but I am not sure exactly what it is yet so I am just experimenting for now.

 Ingredients:

  • 1 slice of Paleo Bread™ – Coconut variety, toasted
  • ½ cup organic red onions, finely chopped
  • ½ cup organic parsley, cut
  • 3 large organic eggs
  • 3 slices organic, nitrate-free ham
  • 1 tbsp coconut oil
  • Dash of Paleo Powder

 Directions:

  1. Preheat oven to 350°F
  2. Sauté red onions in small skillet over medium heat in coconut oil
  3. Coat muffin pan with coconut oil & place ham slices in cups, slice ham to allow for folding
  4. Place sautéed red onions into each cup along with parsley
  5. Crack eggs into each cup
  6. Cook for 18-20 minutes in oven
  7. Toast Paleo Bread and plate
  8. Plate each ham & egg cup, garnish with parsley & Paleo Powder

 Prep Time:

  • 5 minutes+

Cook Time:

  • 20 minutes+

Serves:

  • 1 person
