This is Dan from Primal4Life bringing you ”Chocolate Mocha Cupcakes.” Since we are having guests over tonight for dinner, we decided to make some cupcakes… But which ones shall we make to impress our guests??? Opening up our cabinet fill with a host of cookbooks, old and new, we go for the gusto with one of the latest books that we’ve been turning to; “Make it Paleo”, by Bill Staley, Hayley Mason, with foreword by Mark Sisson . It is a cookbook that is loaded with incredible recipes that amaze your taste buds as well as your guests that think Paleo is all about bacon. And, it’s available through Julian Bakery’s website, in their Paleo section! These cupcakes came out tasting as good as they look, and not even the pickiest eater will know that they have avocados in them. Gotcha! Let’s see how these delectable cupcakes came together!
- 1/2 cup Organic Coconut Flour
- 1/2 cup melted Nuco Liquid Coconut Oil
- 6 eggs
- 1/2 cup pure maple syrup (Go Low Glycemic With Coconut Nectar)
- 1/2 tbsp vanilla extract
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup cocoa powder
1) Set oven to bake @ 350F
3) Place muffin papers into the tray.
4) Fill each muffin cup with 1/4 cup batter.
5) Bake @ 350 F for 35 minutes.
6) Let cool and top with avocado mocha frosting.
Ingredients (for the frosting):
- 1/4 tsp salt
- 1 tsp vanilla
- 1/2 cup pure maple syrup
- 1.25 tbsp ground decaf coffee
Directions (for the frosting):
1) Cut avocados in half, remove pits
2) Remove the flesh and place into a food processor or high-speed blender
3) Add in all other ingredients
4) Blend until smooth
• 10 minutes
• 35 minutes
• 12 cupcakes
Since this is our second experience with avocados mixed into a dessert, we knew it would come out tasting great and they’d be good for you at the same time. Our guests loved them, and when we informed them that the frosting had the green super-fruit in it, they were in disbelief. The “Make it Paleo” cookbook has a bunch of incredible recipes that will inspire you to try new and exciting foods, especially ones that may surprise you with how great they taste!
