Paleo Chocolate Banana Breakfast Bars

Here’s a great recipe for a healthy, yet scrumptious breakfast bar!!  This is Dan from Primal4Life bringing you ”Chocolate Banana Breakfast Bars” from the cookbook OMG That’s Paleo?  Years ago I tried making my own bars; they were “so-so” at best…. I’ve wanted to do some revisions to make them come to life, but honestly I haven’t had the time.  Rachel spotted this recipe in OMG That’s Paleo? yesterday while looking for a breakfast option that wasn’t too complicated to make, that also was healthy and had protein in it.  This not only fits the bill, but it’s got chocolate and bananas in it; a combo that was meant to be!  Add in a few upgrades with some great Paleo products via Julian Bakery, we’ll be on our way to some irresistible treats in no time!

We start this one off by preheating the oven to 350 F, then removing the pits from our dates and placing them (the dates not the pits, Silly!) in our food processor.  Puree them until they break down and clump together, and then add your banana, sunflower seed butter, vanilla extract, eggs, and unsweetened cocoa powder into your food processor, and puree.  Now we do keep organic sunflower butter on hand for a different taste, but I was a little disappointed when I went to reach for my Paleo MeeNut Butter and noticed that we didn’t have 1/3rd cup.  Note to self, order more than one jar at a time!!  That stuff is so good; I’ll have to remake this recipe with some MeeNut Butter in it to compare.  I’m sure it’ll come out better, with a blend of four nuts, no sugar added, and no peanuts too.  Ok, sorry, getting off topic!  Next up, add in your Chocolate Paleo Protein, flax seed, Coconut Secret – Raw Coconut Flour, cinnamon and Sunfood Fine Himalayan Crystal Salt into your food processor, then puree.  Why’d we use Chocolate Paleo Protein?  Because it’s the best out there; non-GMO, organic, it has prebiotics in it, and it’s made from grass-fed cows… It’s the real deal, and comes in Original flavor as well as Vanilla!  For one of the best tasting coconut flours around, we opt for Coconut Secret – Raw Coconut Flour, and it goes way beyond taste when it comes to Coconut Secret.  Another great product lineup available through Julian Bakery!!!! 

Ingredients:

• 8 dried dates, pitted

• 2 bananas, peeled

• 1/3 cup sunflower seed butter (Paleo MeeNut Butter for the win!)

• ¼ cup Chocolate Paleo Protein

• 2 eggs

• 3 tbsp unsweetened cocoa powder

• 2 tbsp ground flax seeds

• 1 tbsp Coconut Secret – Raw Coconut Flour

• 1 tbsp cinnamon

• 1 tbsp vanilla extract

• Pinch of Sunfood Fine Himalayan Crystal Salt

Directions:

1)      Preheat oven to 350 F

2)      Place the pitted dates into your food processor and puree until they begin to break down and clump together.

3)      Add the banana, sunflower seed butter, vanilla extract, unsweetened cocoa powder, and eggs into your food processor, then puree.

4)      Add the Chocolate Paleo Protein, flax seed, Raw Coconut Flour, cinnamon and Sunfood Fine Himalayan Crystal Salt and puree one last time to thoroughly mix.

5)      Grease an 8×8 glass baking dish and pour the mixture into the dish, smoothing out the top.

6)      Place in oven for 20-25 minutes or until you poke the center of the dish with a toothpick and it comes out clean.

7)      Let cool.  Then cut into breakfast bar sizes, whatever that size may be to you.

8)      Take on the go with you and be satisfied!

• 25 minutes

Serves: 6-8

What a great breakfast bar this was!  Even though I enjoyed it for dinner…..  I’ll be sure to give it a whirl tomorrow morning though, but I have a hunch that I will have the same mindset, and will be super stoked once again!  And knowing that I am getting some great nutrients while totally satisfying my sweet-tooth cravings, that makes a difference too.  How so?  Well for starters we spoke about the Paleo Protein….  The Fine Himalayan Crystal Salt has eighty-four trace minerals and brings out the flavor in anything you throw it at.  And the Coconut Secret – Raw Coconut Flour is unbleached, GMO & gluten-free, helps burn fat, and can actually lower the calorie content of food! 

If you are looking for a great breakfast (or lunch, or dinner!) bar option, this is it!  It’s got chocolate, banana, and I just love the whole combination that she has going on.  Juli’s awesome cookbook – OMG That’s Paleo? is packed with a huge selection of gorgeous looking and sounding meals.  Looking through her “Dessert” section, I am eyeballing this recipe for “Double Decker Carrot Cake Cupcakes”, and I’m thinkin’ “OMG that’s gonna be in my belly!!!!!!!!!!!!”  I can’t wait to make it!
