Paleo Chicken & Sweet Baked Apples With Paleo Bread

This is Dan from Primal4Life bringing you ”Chicken with Sweet Baked Apples and Beets.”  I’m always looking for something new to try, a new way to enhance my nutritional intake, and today I found a new one!  Since I found these nifty orange beets yesterday, I thought I would give them a try, and mix them into some old but trusted items that I frequent; like apples, Nutiva Coconut Manna, and cinnamon!  I love the Coconut Manna, and I think it is a great way to sweeten up your food, while you reap the added benefits of all natural coconut.  So, I decided to dice the beets and the apples up, add a little olive oil, and bake them along with my chicken.  I figured they would go well together… And you know what else might go well with this combo?  Some Paleo Butter, especially on some almond Paleo BreadPaleo Butter is actually clarified butter, aka “ghee”, and this one in particular is extremely delicious.  It has a lovely aroma and taste that is very distinct, and since I have found it available on Julian Bakery’s website, I have been enjoying it with lots of my meals.  Finally, with some organic chicken, salt and pepper, we have all of our ingredients out and we are ready to bake!

Ingredients:

• Olive oil for cooking

• 2 orange beets – diced (or another type of vegetable like sweet potato if you prefer)

• 1 small apple – diced

• Cinnamon to sprinkle on beets & apples

• 1 chicken breast, or whatever protein/cut you prefer

• 1 slice Paleo Bread™

• 2 tsp Paleo Butter

• 1 tbsp Coconut Manna

Directions:

1)      Set oven to 350 F

2)      Cover beets & apples with olive oil and sprinkle with cinnamon

3)      Cover chicken with olive oil, and sprinkle with salt and pepper

4)      Bake until chicken is cooked, around 165 F

5)      Toast  Paleo Bread™ to your liking, and plate.

6)      Add  Coconut Manna to beets and apples, allow to melt.

7)      Plate all items, and add a dab of Paleo Butter to chicken, and Paleo Bread

• 45 minutes

I really enjoyed this dish, it was appealing to the eyes, and the taste buds too!  I am glad I tried the orange beets, as I like to vary my foods for different nutritional values.  Do I think they were the greatest thing since sliced Paleo Bread?  No… But they worked in this dish!  Although with the massive enhancements by using Paleo Butter and Coconut Manna, the beats and apples worked quite well together.  The chicken, finished with a light coating of the Paleo Butter, was excellent!  And don’t forget about the healthy almond Paleo Bread™ with a dab of Paleo Butter as well…. Its good tasting and good for you; without the GMO’s, grains, gluten, soy, carbs and cals… But loaded with good fats, protein and fiber!  Overall, a great Paleo meal that has lots of nutrition and tons of great taste!
