Paleo Chicken Lo Mein With Low Carb Miracle Noodles

Paleo Chicken Lo Mein – Low Carb, Gluten Free & Grain Free! 


 2 (17-oz) packages Miracle Noodle Angel Hair, prepared according to package directions

2 large organic range free chicken breast halves, diced

3 large cloves of garlic, minced

1/8 teaspoon cayenne pepper

2 – 3 teaspoons organic extra virgin coconut oil

1 cup organic small broccoli florets, steamed

3 – 4 mini peppers, diced (red, yellow, orange)

1/2 cup organic free range chicken broth

4 tablespoons organic low sodium tamari sauce

3 tablespoons natural peanut butter

Pinch or two crushed red pepper flakes, optional

2 tablespoons roasted blanched almonds, optional


 In a medium sized non-stick skillet, heat 1 teaspoon coconut oil until hot; add diced peppers and stir-fry until crisp tender; remove to a small plate and set aside.  Add additional teaspoon or two of coconut oil to the skillet and when hot, add diced chicken breast and stir-fry until white and cooked through; remove cooked chicken to a small bowl and set aside. 

 Add approximately 1/4 cup of the chicken broth, tamari sauce and cayenne to the skillet along with 1 tablespoon of the peanut butter, stirring until heated and thickened; gradually stir in additional chicken broth and peanut butter as needed until desired consistency of sauce is achieved (if more thickening is desired, add peanut butter).  Taste sauce and adjust seasoning.  Add prepared angel hair Miracle Noodles to the sauce, tossing with tongs to evenly coat noodles with sauce.  Add diced peppers, chicken, steamed broccoli florets and optional crushed red pepper flakes to the pan, tossing well to mix with noodles and sauce.  Serve sprinkled with roasted peanuts, if desired.  Makes approximately 3 servings.
