If you are looking for a great, classic sandwich, made in a healthy way, you’ve come to the right place! This is Dan from Primal4Life bringing you a ”Paleo Bacon & Egg Salad Sandwich!” I’ve always loved egg salads, as is or in sandwich form…. I’m not picky! But looking back, it probably wasn’t the healthiest of options; because of what was in ‘em, along with poor quality eggs, and very unhealthy bread that contained gluten, gmo’s, soy, wheat…. Its 2013 folks, and we have the ability and the knowledge to make things right, so why not incorporate a few healthy items from Julian Bakery to recreate the ultimate egg salad sandwich?
First and foremost, we are going to be using Paleo Bread. It’s gluten-free, grain-free, dairy-free, soy-free, GMO-free, yeast-free, and tastes great… No insulin spike which means we have a happy tummy and body… Also, Paleo Bread is made with nothing harmful, just a few organic ingredients that we all can read without sounding like we are talking about a science project. I couldn’t make up my mind when whipping up this meal, so I chose one of each; Coconut and Almond. Oh, and they taste great, have protein and fiber, and they are low in carbs and calories too!
The main ingredient is the egg, so it’s detrimental that we source a healthy, organic egg. I always go local from a farm that we trust when it comes to my eggs. Then we have some great veggies like organic celery and scallions. When it comes to bacon, I don’t mess around; I go for nitrate-free and organic as much as possible. Mayonnaise can be a tricky one, you have to read the labels and make sure you aren’t getting more than you bargained for. But there’s a simple solution…. Most of the cookbooks that Julian Bakery offers have a Paleo Mayo recipe in them. Take 500 Paleo Recipes for example, we make a batch of this and store it in a glass jar in the fridge. It’s simple to make, tastes great, and we know exactly what’s in it. Some organic mustard, a little Himalayan Salt, black pepper, and that tasty Paleo Powder to spice things up, and we have an awesome egg salad right there!
• 2 slices Paleo Bread
• 3 hard boiled eggs, chopped
• 1 scallion, chopped
• ½ celery stalk, chopped
• ¼ cup Paleo Mayo
• ½ tsp Mustard
• ¼ tsp Paleo Powder
• ¼ tsp Sunfood Super Foods Fine Himalayan Crystal Salt
• Black pepper to taste
• 3 strips organic nitrate-free bacon, chopped
1) Cook bacon to your liking
2) Hard-boil eggs, peel, chop and place into a bowl
3) Add all ingredients except bacon and Paleo Bread into the bowl, and mix
4) Toast Paleo Bread
5) When ready to serve, add chopped bacon and lightly mix again
6) Serve, and savor the moment

We have a winner! I cannot ever recall a better egg salad sandwich…. This takes the trophy, with some organic bacon flavor, merged with that great Paleo Powder spice, and that light Himalayan Salt taste…. Combined with that lovely egg yolk consistency, the creamy Paleo Mayo, and the crisp veggie crunch that’s mixed in there… Yum! And, we have it merged between some incredible Paleo Bread! I love the fact that we can take classics like this one, make them healthier and taste better! Who says healthy isn’t tasty?
