This is Dan from Primal4Life bringing you ”Hash & Eggs over Almond Paleo Bread.” I just love breakfast, especially when it’s one that is simply uhhhhmazing!!! Sometimes the best meals are made with leftovers, which is how this one came together. Out of the “500 Paleo Recipes” cookbook, by Dana Carpender, we found a great recipe simply named “Hash Browns”. And it also, simply, uses only three ingredients! Onions, turnips, and bacon grease or lard. Now as a teaser, I’m not going to tell you exactly how to create the hash browns, but once you get the cookbook you can make it and then make my “Hash & Eggs over Almond Paleo Bread!” We purchased the cookbook from Julian Bakery, their Paleo section is blowing up, with hot cookbooks right off the press, incredible condiments, great bars and obviously the best breads in the world!
Starting with our hash browns, I put them in my cast-iron skillet with olive oil, and reheated them. Actually, I wasn’t just reheating them, but I was giving them a little extra “char”… The smoke-alarm was ready to scream, but so was my appetite! Meanwhile, I started toasting my almond Paleo Bread with my toaster oven. I just love the Paleo Bread as it’s the only bread I can enjoy without side-effects. It’s Non-GMO, grain and gluten free, soy free, low in carbs and calories, high in fiber which keeps me fuller longer, and made from all natural ingredients which allow it to taste great! Once the Paleo Bread was toasted, I decided to add a little olive oil to the bread, and put the two slices in my cast-iron skillet next to my hash browns, just to bring in a little more flavor. Finally, I crack a couple eggs which we sourced from a local farm, nothing but the best right?
- ½ cup hash browns – from the cookbook “500 Paleo Recipes”
- 2 eggs
- 2 slices almond Paleo Bread™
- Olive Oil
- · Salt & Pepper to taste
1) Heat 2 tablespoons olive oil in cast iron skillet
2) Add hash browns, to reheat and get charred
3) Add Paleo Bread to toaster oven
4) When Paleo Bread is complete, add to skillet and add olive oil to both sides of bread
5) Crack eggs in pan, and cook to your liking
6) When toast is done, plate, and then add hash browns and eggs
7) Salt and pepper to taste

• 12 minutes
This was a very filling breakfast, which had flavor beyond belief! I love that dark, charred taste, especially mixed into my yolks. And speaking on behalf of nutrition, this one is loaded with it. From the turnips, to the onions, to the eggs with the nutritious yolks, to the Paleo Bread that is loaded with good fats and made from all natural ingredients. I definitely will be making this one again, possibly a version that has been kicked up with some Paleo Powder!!
