This is Dan from Primal4Life bringing you a ”Mexican Omelet on Paleo Bread.” It’s been quite a while since we’ve enjoyed Mexican food, because generally going to those restaurants aren’t so Paleo…. But today when I opened the fridge and saw some fresh salsa sitting there, I decided to go for a Mexican Omelet with some coconut Paleo Bread. I know I can keep it healthy, tasting great, and avoid all of the nasty fats (and go with healthy fats!), keep it low carb, and skip out on who knows what else is in the food that you order when you go out. Since I got my Paleo Bread and the Paleo Butter (which the eggs are cooked in), I know the ingredients, I know where it came from, and I know those ingredients are all healthy, organic, and Paleo approved. Not to forget about them being non-GMO and gluten-free, which is very important to me; someone who has Leaky Gut Syndrome and suffers from aches and pains after eating not only poor foods but even “good” foods that weren’t organic. To be straightforward, if I eat something that came from animals that were given antibiotics, hormones, or anything “bad” like that, I feel horrible, I get itchy and achy, and thankfully Julian Bakery is one of the only places that I can shop without worry!!!
• 2 local eggs
• 1 tsp Paleo Butter
• 1.5 tablespoons fresh organic salsa
• 1 slices coconut Paleo Bread
• Organic Cheddar cheese
• Sprinkle of Paleo Powder
• Sea salt and black pepper to taste
1) Melt Paleo Butter in frying pan
2) Crack eggs into pan once butter is melted, then add salsa and Paleo Powder
3) Mix well, and allow to cook to your liking
4) Melt cheese on omelet towards the end of cooking
5) Cook Paleo Bread in toaster oven to your liking
6) Serve omelet over Paleo Bread, and add additional salsa if you prefer
7) Add Sea Salt and black pepper to taste

Arriba!!!!!!!!! What a great breakfast this was, and with some Paleo Powder kick too! The Paleo Powder is made without gluten or MSG, and as you can see it added great flavor with only a sprinkle…. A little bit goes a long way, I guess that’s why I am on my first bottle still! With the local, fresh ingredients, and the top notch Paleo products from Julian Bakery, this was an omelet that was filled with good nutrition and we were able to ditch the GMO’s, gluten, grains, soy and even carbs… But I still got to enjoy some bread, oh yeah!!!
