Low Carb Bruschetta Recipe With Paleo Bread™

Make Delicious Organic Low Carb Bruschetta With Paleo Bread™


 1 – 2 Tablespoons organic extra virgin olive oil, plus extra to brush on bread

2 cloves garlic, finely minced

1 whole peeled clove of garlic (to rub on toast)

1/2 cup red organic cherry tomatoes, sliced in half

1/2 cup yellow organic cherry tomatoes, sliced in half

1 teaspoon balsamic vinegar

4 whole fresh basil leaves, sliced thinly (chiffonade)

Pinch Celtic Salt, to taste

Freshly ground black pepper, to taste

2 slices Coconut Paleo Bread (made with organic coconut flour) (1 Digestible Carb Per Slice)


 Place tomatoes in a medium bowl and set aside.

 In a medium non-stick skillet, heat 1 tablespoon olive oil over medium heat. Add garlic and sauté lightly for a few minutes until very lightly browned. Add cooked garlic to the tomatoes. Stir in 1 teaspoon olive oil, 1 teaspoon balsamic vinegar and fresh basil.  Season to taste with salt and black pepper; set aside.  

 Brush one side of the Coconut Paleo Bread with olive oil until thoroughly coated.  Place bread in the same skillet that you cooked the garlic in (oiled side down) and turn heat up to medium-high and cook until golden brown and crisp.  Brush the remaining top side of the bread with olive oil and flip over and cook until both sides are golden brown and crisp.  Remove bread from pan and place on a plate.  Cut the end off of the remaining whole clove of raw garlic and rub it all over the top side of the bread.

 Spoon the bruschetta on top of the toasted bread.  Yields 2 servings.

    I recently purchased the zero cinnamon and the paleo coconut breads….they rock!!!
    My 3 year old grandson and my hubby loves both breads and they don’t have a “Special Diet”!!! I can’t wait til you make the pancake mix available in the zero carb!!!!! It’s so nice to finally be able to eat bread again without getting sick;)
