Julian Bakery’s Paleo French Toast Recipe

So I start this recipe by cracking two local eggs in a bowl, adding a teaspoon of cinnamon and nutmeg, and a few drops of vanilla extract.  Mix that up really well with a whisk, and then place your slightly toasted coconut Paleo Bread into the bowl and allow it to soak up that batter.  While that is soaking, if you want to make a “sugar” topping, you can try this healthier alternative….  In my blender, I simply added ½ a tablespoon of unsweetened coconut flakes, and ½ a teaspoon of Coconut Secret – Coconut Crystals.  It’s available through Julian Bakery, and it is a healthy sugar alternative because it has seventeen amino acids, minerals, vitamin C, several B vitamins, and it’s GMO free, gluten free, and also low glycemic.  With those two items in the blender, set the blender to high and finely grind those two ingredients down to a powder… Now you have a great “sugar topping”.  After this step, I turned on my frying pan with a little Paleo Butter, another healthy alternative that gives you more nutrition than traditional butter, and tastes great.  Also available through www.JulianBakery.com/Paleo – you are seeing that this site is very convenient, aren’t you?  Cook up the soaked slices of Paleo Bread, and once done you can plate them up!  Top with some Coconut Secret – Coconut Nectar for the win, and you are ready to dig in!  Oh, and the Coconut Nectar is also another great product that Julian Bakery offers!



• 2 eggs

• 1 teaspoon cinnamon

• 1 teaspoon nutmeg

• A couple drops of vanilla extract

• 2 slices coconut Paleo Bread

• ½ tablespoon unsweetened coconut flakes

• ½ tablespoon Coconut Secret – Coconut Crystals


• 2 teaspoons Paleo Butter

• Fruit of your choice, I went with strawberries and blueberries

• 1 tablespoon Coconut Secret – Coconut Nectar


1)      Mix eggs, cinnamon, nutmeg and vanilla extract in a bowl.

2)      Slightly toast coconut Paleo Bread, then transfer to batter and allow bread to soak.

3)      Blend coconut flakes and Coconut Crystals in blender until in a powdered form – set aside.

4)      Melt Paleo Butter in pan and cook Paleo Bread like you would for French Toast

5)      When done, plate, add fruit, sprinkle powdered “coconut sugar” on top, and add Coconut Nectar  or Nature’s Hollow Xylitol Maple Syrup

    I would use an egg/coconut or almond milk soak. Then I would top it with stevia, the powdered kind. I also use the pizza dough to make biscuits by adding butter or coconut oil and eggs.

    Ooh thanks for the biscuit idea Molly. And this recipe looks great. I’ve made French toast with Paleo bread before, but I love the coconut sugar idea.
