Gluten Free Paleo Indulgence Cookie Recipe

This is Dan from Primal4Life bringing you ”Some-More-Ahhhhhs.”  Looking to impress some guests?  Wanting to make those Girl Scout cookies taste like highly processed cookies?  Well….  These are the cookies for you to bake up!  We were absolutely amazed at how great these came out, especially when warm…. They were from the cookbook Paleo Indulgences, which we picked up through Julian Bakery, their Paleo section which is chock full of goodies!  Goodies like the super healthy and all natural Paleo Bread.  Goodies like the zero-calorie and zero-guilt Miracle Noodles.  And goodies like a great selection of cookbooks just like this one!  We were astonished with the incredible looking recipes that were in Paleo Indulgences, and I’m glad we chose this one to try for our first meal out of this great book.

Ingredients (for the cookie):

Dry Ingredients

• 2 cups almond flour

• ½ cup unsweetened finely shredded coconut

• ½ tsp baking soda

Wet Ingredients

• ¼ cup pure maple syrup

• 2 tsp pure vanilla extract

• 1 egg

• 3 Tbsp coconut oil, melted

 Ingredients (for the caramel):

• 1 cup Coconut Secret- Coconut Crystals (Organic)

• ¼ cup Coconut Secret – Coconut Nectar (Organic)

• ½ cup full-fat coconut milk

 Ingredients (for the tops):

• ½ cup unsweetened finely shredded coconut

• 1 large dark chocolate bar (preferably Paleo Chocolate)


1)      Preheat oven to 350 F

2)      Make the cookies.  Place dry ingredients in a medium bowl and whisk to combine.

3)      Add the wet ingredients to the dry and blend well with a hand mixer.  Cover and refrigerate dough 15 minutes.

4)      Scoop rounded tablespoonfuls of dough onto two parchment-lined baking sheets.  Place six cookies on each tray, as they will spread a little. 

5)      Bake 12-13 minutes, or until golden brown.  Cool cookies on trays for 5 minutes, then transfer to a wire rack to cool completely.

6)      Lower oven heat to 300 F.

7)      Meanwhile, make the caramel.  Place the caramel ingredients in a medium saucepan and stir to combine.

8)      Heat over medium-high heat, boiling until mixture reaches 250 F on a candy thermometer (about 20 minutes).

9)      Remove from the heat and let cool about 10 minutes.

10)   Meanwhile, make the toppings.  Toast the coconut by spreading it out in a thin layer on a baking sheet and baking in the 300 F oven 10-15 minutes, stirring every few minutes to help it toast evenly.  Place all the chocolate at the top of a double boiler over simmering water and stir until almost melted.  Remove from the heat and stir until completely melted and smooth.

11)   To assemble cookies, place a small spoonful of caramel on top of each cookie.  Top with a sprinkle of toasted coconut.  Let cool.

12)   Dip the bottom of each cookie in chocolate.  Place on parchment lined baking sheet to set.  Then drizzle the tops with chocolate.  Let cookies sit about 1 hour for the chocolate to fully set up.

13)   Enjoy!  Store in an airtight container up to 5 days, or in the freezer up to 3 months!

I’m sure the recipe, as is, would have been great… But we decided to take it to the next level by upgrading a few of the ingredients to Julian Bakery standards.  Using Coconut Secret – Coconut Crystals and Coconut Secret – Coconut Nectar, we ensured that this recipe was going to be the bomb!  That’s a good thing!!!  Everyone loved the cookies, and I was happy to tell people that “These are Paleo!”  Then I introduced them to showed them where to get all of these great items in one place.  Not only could they believe that these cookies were made with all natural, non-GMO ingredients, but also that they were gluten and dairy free and had so much flavor and taste!
