After a score of fresh veggies from my Uncle’s garden, I couldn’t wait to try some new and interesting Paleo Wrap combinations. This is Dan from Primal4Life bringing you an ”Escarole & Herbed Chicken Paleo Wrap.” Escarole is one of my favorite veggies around, I love the bitterness, and you know it has to be packed with a ton of nutrients! If you’ve read my posts in the past, you know I’m all about getting as much nutrition as possible, and that’s why we use quality products like the Paleo Wrap; made with organic, non-GMO coconut, it’s the perfect way for us to enjoy our Paleo meals without gluten, grains, soy, or even dairy.
This meal starts off with a bunch of fresh herbs, garlic, Quantum Pink Salt and black pepper, lemon juice, and some Nuco Liquid Premium Coconut Oil, along with some organic chicken… White or dark, you choose… I choose dark, since I love the tender, moist and delicious thighs; and cooked up with the fresh herbs combined with the Quantum Pink Salt and Nuco Liquid Premium Coconut Oil, you know it’s gonna taste great!
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh oregano, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh tarragon, chopped
- 1 tbsp fresh sage, chopped
- 2 cloves garlic, minced
- 2 scallions, chopped
- 1 tbsp lemon juice
- 3 tbsp Nuco Liquid Premium Coconut Oil
- Quantum Pink Salt and black pepper to taste
- 1.5 lbs organic chicken
- 1 tbsp Paleo Butter
- 1 large head escarole
- 2 cloves garlic, minced
- Paleo Wraps
- Combine first seven ingredients in a bowl, mix together.
- Add in lemon juice, Nuco Liquid Premium Coconut Oil, Quantum Pink Salt, and black pepper.
- Add in chicken, coat, and grill until chicken is thoroughly cooked.
- Meanwhile, heat pan with Paleo Butter, garlic, and escarole, and sauté until done.
- Serve chicken and escarole in Paleo Wrap.

The escarole, done in the ever so tasty Paleo Butter, came out so delicious…. Paleo Butter is made from grass-fed cows, and packs a lot of nutrition yet virtually zero lactose. Where’d I get it? If you aren’t an escarole fan, feel free to substitute it with a green of your choice, like baby spinach or some fresh kale.
Once this meal was assembled and wrapped, it was tasty, filling, and as I mentioned before it’s nutritious! We’ve got a lot of herbs, greens, healthy fats, quality proteins, as well as the anti-inflammatory gaaahlic. And in case you didn’t know, the Nuco Liquid Premium Coconut Oil comes in a garlic version too! Engulfed in a lovely Paleo Wrap or two (I use two when we have some wet and/or hot items), it’s the perfect way to wrap and enjoy just about any meal!
