Delicata Bacon & Eggs Paleo Wrap Recipe

Fall is basically here in the north east, and we’re starting to see more and more squash.  I think it’s time to start incorporating some into our meals!!  This is Dan from Primal4Life bringing you a “Delicata Bacon & Eggs Paleo Wrap”.  Eating in season is a great thing; Mother Nature is providing you with the best for the climate at that point in time.  So when we start seeing these Delicata squash, we slowly start changing things up and going with the flow.  They are delicious, savory, and so good for you!  Granted, a serving (1/2 of one Delicata squash) has fifteen net carbs and seven grams of sugar, so if you are looking to go ketogenic it may not be the food of choice.  But keep in mind that is also loaded with vitamins A and C, has iron and calcium, and doesn’t have a ton of calories either.

Combined with some delicious and nutritious Paleo Butter (more vitamins A, D & K2!), a couple farm fresh eggs, and Applegate nitrate-free organic bacon, we have quite a way to start our day!  And best of all, we are wrapping things up with a low-carb and gluten-free Paleo Wrap!  What better way to enjoy this meal?!?!?  It has no GMO’s, no soy or starch, and only four net carbs.  Plus it’s made from organic coconut, which has lots of health benefits in itself!  Healthy saturated fats, MCT’s (which help you burn fat), lauric acid (which can kill harmful pathogens like bacteria, viruses and fungi), and raise your healthy HDL cholesterol levels too!

Ingredients:

Delicata-Bacon-&-Eggs-Paleo-Wrap-(7)

Directions:

1)      Cut squash in half lengthwise, place in oven open-side down for 40 minutes at 400F.

2)      Meanwhile, you can make your bacon as you prefer.

3)      When soft, remove from oven carefully, and set aside.

4)      Cook eggs, as you wish, in Paleo Butter.

5)      Scoop out squash into Paleo Wrap, top with bacon, eggs, and season with salt.

Prep Time:  5 min

Cook Time:  40 min

Serves: 1
