Creamy Coconut Eggs over Paleo Bread

This is Dan from Primal4Life bringing you ”Creamy Coconut Eggs over Paleo Bread.”  After perusing the cook book “500 Paleo Recipes” by Dana Carpender, I had to make one of her delicious concoctions for this morning’s breakfast.  But since I’m short on time today, I figured I’d make something simple, yet effective.  Effective meaning something that will fill me up and also satisfy my craving for a great Paleo meal.  Once I saw “Creamy Coconut Eggs”, and when I noticed how simple this was to make, I was all over it.  I started off with a few local eggs, a quarter-cup of unsweetened coconut milk, and two teaspoons of coconut oil.  Dana gives you the option to choose whatever fat you crave, and since I am an avid fan of the coconut, I wanted to keep the trend going.  Now watch how simple this is…. Crack three eggs in a bowl with the coconut milk, and whisk for a minute.  Then, melt your fat in the pan, and add the egg mixture in.  That’s all that’s required, you just have to make your scrambled eggs from here on out.  I decided to enjoy this coconutty egg breakfast over a nice piece of what else, but coconut Paleo Bread™! Along with some coconut oil to moisten it up and bring out some of that great coconut flavor.  Julian Bakery makes a great low carb slice, which is also low in calories, and lacks GMO’s, grains, gluten, dairy, and is also starch free! 


• 1 slice coconut Paleo Bread™/ Also Try Paleo Wrap

• organic Nuco liquid Coconut oil

• 3 eggs

• ¼ cup unsweetened organic coconut milk

• Sea salt to taste


1)      Crack eggs into a bowl

2)      Add ¼ cup of unsweetened coconut milk into bowl

3)      Whisk for 1 minute

4)      Melt coconut oil in pan

5)      Add egg mixture to pan

6)      Cook Paleo Bread™ in toaster oven

7)      Add coconut oil to bread once slightly toasted

8)      Cook eggs to your liking, stirring to a scramble in this case

9)      When toast is done, plate.

10)   Add Sea salt to eggs if desired

11)   Top toast with Creamy Coconut Eggs

I’m glad I tried this one, having an open mind is a great thing and allows you to experience new things.  Even I, the coconut fan that I am, hesitated for a second when I read this…. But I knew it would be outstanding.  And, it was!!!  The eggs were so light and fluffy, I have never experienced such a delightful scramble.  Along with the coconut Paleo Bread™, each bite had a nice coconutty crunch, that teamed with up with a wonderful soft pillow of coconut egg.
