Chili Lime Pork Medallions Wrap

Yay!!!! It’s new Paleo cookbook day!  And we are cooking up an incredible Paleolicious meal from it!  This is Dan from Primal4Life bringing you “Chili Lime Pork Medallions” from Tammy Credicott’s latest book: Make Ahead Paleo.

After making a couple meals out of “Make Ahead Paleo” and quickly learning that these recipes are no joke, this cookbook has quickly become one of our favorite go-to resources for Paleo meals.  Tammy designed this book for you, and you, and me!  The average person is rushed, always on the go, and pressed for time.  By using Make Ahead Paleo as a tool to help get yourself and your family ready for whatever is in your future, you’ll be one step ahead!  Tammy has broken the book down into six sections; “Make & Freeze”, “Low & Slow”, “On the Go”, “Room Service”, “Travel Treats”, and “Week in a Day”.  Just by looking at these Paleo-Chapters you may get an idea of how she is going to help you plan out your meals.

“Make & Freeze” is all about make-ahead-and-freeze recipes that you can either throw together with some spare time, or you can spend hours making a ton of awesome meals to stow away.  She even gives you a chart on how to store certain foods, and how long you can store it away for.  

Time to bust out your slow-cooker!  “Low & Slow” is all about just that…. Paleo meals that allow you to set it and forget it!  Giving you a day of relaxation… And you get to come home to a delicious, ready to eat meal!

Travel much?  “On the Go” helps you plan out foods to take with you, whether it’s on a plan, train or automobile!  Plus, she gives you a ton of food/travel tips to make your life that much easier, and your trip that much better.

We’ve enjoyed two delicious meals from the “Room Service” chapter, and I cannot believe how savory and wonderful these meals were…. Especially considering they are using basic ingredients, everyday kitchen items, and they aren’t hard to make!  These food recipes were designed so you can make these in a hotel, it’s that simple folks!

Got a Paleo sweet-tooth?  Who doesn’t?!??!  Well this chapter is just for you…  “Travel Treats” sounds awesome…  Every cookbook should have a good treat section, and Make Ahead Paleo has an outstanding one!!!

And finally the last section is “Week in a Day”, where Tammy helps you plan out your meals for the week.  She gives you all the information that you need; a grocery list and a bunch of tasty meals… which gives you more time to enjoy the things that you really love to do!

Ingredients (Container #1):

  • 2-3 lbs pork tenderloin, sliced into 3/4 inch-thick medallions

(Prep Day):

  1. Place the pork medallions in a 1-gallon zip-top bag (Container #1).  Remove the air, and seal the bag.  Refrigerate until needed.

  2. In a food processor, puree the sauce ingredients until blended and smooth.

  3. Place the sauce in an airtight container (#2), and refrigerate until needed.

(Serving Day):

  1. Sprinkle salt and pepper into the bag with the pork medallions.  Press the pork around in the bag with your hands to spread the salt and pepper.

  2. In an electric skillet set to medium heat, heat the coconut oil.  Place the pork in the skillet, and cook for 1-2 minutes or until it has browned on one side.  Turn the pork over, and cook for another 1-2 minutes until the other side has browned.

  3. Shake the sauce container to combine the ingredients.  Pour the sauce into the skillet, and cook, stirring occasionally, until the pork is cooked through, about 4 minutes.

  4. Serve the pork with veggies of your choice in a Paleo Wrap, with the sauce spooned over the top.

Serves: 4

Cook Time: 10 minutes

As you can see, this wasn’t tough to make, and with a few Julian Bakery upgrades, we’ve turned this into a Paleo Wrap masterpiece!  If you followed the video that went along with this blog, you’ll notice we had some oven roasted veggies, which I added to my “Chili Lime Pork Medaliions”.  It was incredibly delicious, satiating, healthy, and was just as good as my leftovers the next morning!
