It’s hard for even me to believe this; but I didn’t eat red meat for more than half my life up until about 18 months ago when I got pregnant. Needless to say I had a bad experience with meatballs as a kid while eating dinner a friends house and decided that day to stop eating red meat, which lasted for about 18 years! When I was pregnant, I started craving red meat, specifically hamburgers, gasp!
I shocked myself with this odd craving but caved into it every Friday night when my husband and I would go get “In and Out” burgers. To my husbands surprise and dismay, I had never had an In and Out burger and even if you have never been there, you probably know about it. If you don’t, well let me tell you, they are amazing! They always use fresh ingredients and you can order the hamburger with lettuce instead of a bun so it can be paleo friendly!
Ok so burgers, yay! Meat, yay! All the time? NO WAY! There’s many days where I feel like the last thing I could stomach is another meal with meat due to the increased amounts of meat I eat on the paleo diet and I feel that way especially at lunch so I try my best to mix things up and do different things.
Fortunately, I found Julian Bakeries Paleo bread, which is great because it’s packed with protein so I’m able to not eat meat but still get some protein for my lunch. The other night I made some chicken dish and a side of cauliflower bacon fritters and oh man are they BOMB! Yup I said bomb, that’s how good they are! So I thought I’d put it on some paleo bread and bam, there’s my lunch!
1 head of cauliflower (cooked and blended until smooth but still chunky)
4 pieces of organic nitrate free bacon (cooked and chopped)
¼ c. chives, diced
1 medium tomato, sliced
Julian Bakery Coconut Paleo bread, toasted
Combine mashed cauliflower, bacon, coconut flour, egg and chives in a large bowl and mix to combine. Form into patties about 2” in diameter and ½” thick
In a large pan, heat coconut oil over medium high heat and place the cauliflower fritters in and cook on each side until browned (you may need to cook them in 2 separate batches so that they have enough room in the pan)
Place a sliced tomato on top of Julian Bakery Coconut Paleo bread and then place the fritter on top of the tomato and ENJOY!
