Bok Choy & Beet Chipped Paleo Wrap

Beets are a wonderful thing…. And today I’m going to lightly fry them up to go along with my breakfast Paleo Wrap!  This is Dan from Primal4Life bringing you a “Bok Choy & Beet Chipped Paleo Wrap”.  I never realized how healthy beets were for you until I was really sick and down in the dumps.  When I was literally at rock bottom a few years ago after acquiring Leaky Gut from taking antibiotics, my body had been absolutely bombarded with what I consider a chemical-bomb….  After that, whenever I would eat (or juice) beets, my skin would break out in horrible rashes.  Why did this happen?  Beets are one of the most detoxifying foods around, and since my body was overloaded with toxins, the beets were clearing out my liver and causing a detox reaction.

Ever since, I’ve been trying to gradually introduce more and more beets into my diet.  I couldn’t go full force though, since I wanted to allow my body to detox, but not to aggressively where I would become sick.  It was quite an uncomfortable situation to say the least!  So with that said, beets also are considered “Nature’s Viagra”, they are very calming since they have tryptophan along with being great for mental health, and they are high in many vitamins and minerals.  And since we Paleo peeps are looking to eat quality foods that enhance our lives while healing the body, I’m going to combine sliced beets with some Bok Choy leaves and pasture raised eggs.  And how am I going to eat them?  All wrapped up in a wonderful Julian Bakery Paleo Wrap!

  1. In a medium sized frying pan over medium heat, add your beet slices to 1 tablespoon of coconut oil.  Allow to cook for 5 minutes, then flip and add Bok Choy leaves.  Season with salt, pepper and rosemary, then cook for another 5 minutes.
  2. After 5 minutes and Bok Choy leaves are softened, set aside on a plate.
  3. Add ½ tablespoon coconut oil and cook eggs to your liking, seasoning with more salt and pepper.
  4. Add eggs to your Paleo Wrap and top with beet chips and greens.

Cook Time:  13 min

For a great Paleo meal, look no further.  This one had a slight crunch in those fried beet chips, the greens were sautéed to perfection, my eggs were nice and soft, and the Paleo Wrap held it all together while giving it a nice light coconut taste.  Plus, we’ve seasoned this all up with Quantum Pink Salt, ground black pepper, and some dried rosemary (which is also loaded with antioxidants as well as vitamins and much more!).  If you are wondering what’s up with the salt, it isn’t your average salt!  It’s quite delicious, it’s got no added chemicals or binding agents like traditional salts contain, and it’s loaded with trace minerals from two lovely sea salts; Mediterranean Sea Salt and pink Alaea Hawaiian sea salt. is where I shop, for the ultimate in Paleo-goodies!  As you can see, this is not a meal loaded with sugared ingredients and processed stuff, that’s pawned off as Paleo.  I opt for the healthiest stuff on the planet, to make a meal that will fill me up, provide my body with the nutrients it deserves to heal and perform, while being low-carb and very low in sugar.  All the while, I’m skipping out on processed, fake, gluten-filled GMO ingredients.  Thank you Julian Bakery!
