Balsamic Mustard Chicken and Veggie Paleo Wraps

For an oh-so savory chicken, combined with some awesome veggies, keep readin’!  This is Dan from Primal4Life bringing you “Balsamic Mustard Chicken and Veggie Paleo Wraps.”  So many combinations, so little time…. Paleo is just the beginning, suggesting organic plants and animals, healthy fats, some nuts, seeds, fruits.  And then from there you can figure out what you like, how you feel, what works for you.  What works for me is some delicious Paleo approved foods and ingredients, combined with the incredible and super edible Paleo Wraps!  They are made from organic coconut, which is totally Paleo dude… GMO-free, dairy-free, low in carbs and calories, and super tasty too!  Plus, they last for up to nine months unrefrigerated, yeah you read that right!  That fact alone makes Paleo Wraps portable, great for trips, the workplace, or just any on-the-go meal.

Looking at the ingredients, you can see it’s all healthy stuff!  No grains, no soy, nothing bad…. A solid meal that will satisfy just about anyone.  And as mentioned above, combining it with a Paleo Wrap will allow you to experience wraps again, in so many ways!

Ingredients – Balsamic Mustard Chicken:

  • 2 boneless skinless chicken breast

  • 1/4 cup Balsamic

  • 1/4 cup extra virgin olive oil

  • 3 cloves of minced (or chopped) garlic

  • 2 1/2 tablespoons spicy brown mustard

  • Salt and pepper to taste


  1. Season both sides of chicken breasts with salt and pepper to your liking. Place them in a ziplock bag and add the balsamic, extra virgin olive oil, spicy brown mustard and garlic. Zip up the bag and massage the chicken.  Place in the refrigerator and let marinade for as long as you want…. The longer the better!

  2. In a medium size sauce pan over medium/high heat, let the pan get nice and hot! Put a drizzle of extra virgin olive oil in the pan, place your chicken breast in the pan and brown on both sides. Once both sides are browned, turn down heat to medium and add in some of the marinade juices.  Cover with a lid and let the juices reduce down in the pan with the chicken. Occasionally checking on the chicken and stirring around the sauce to make sure to pick up all the chicken bits on the bottom of the pan until the chicken is fully cooked and no longer pink on the inside.

Ingredients – Roasted Bacon Veggies:

  • 11 strips organic nitrate-free bacon

  • 3 zucchini

  • ½ lb of Brussels sprouts

  • Extra virgin olive oil 

  • Salt and pepper to taste


  1. Cut your bacon into bite size pieces and fry them up till they are nice and crispy.  When they are done cooking set the bacon pieces on a paper towel lined plate to soak up the left over bacon grease and set them aside.

  2. Cut the Brussels sprouts in half place on a cookie sheet that is already covered in foil.  Next cut the end of your zucchini’s, cut them in half length wise then cut them into half circle shapes and place them on your cookie sheet with your Brussels sprouts. Drizzle with olive oil and roast in the oven at 350 for about 20-30 minutes or until they are starting to get a little golden brown color to them and the Brussels sprouts are tender. For the last 5 minutes you can add your bacon on top of your veggies just to warm your bacon. When the veggies are done take them out and sprinkle them with salt and pepper to taste.

  3. Serve with chicken in Paleo Wraps!

Prep Time: 10 minutes

Cook Time: 30 minutes
