Bacon Wrapped Mahi-Mahi on Paleo Bread

Here’s yet another amazing Paleo Bread combo that will blow your socks off!  This is Dan from Primal4Life bringing you a ”Bacon Wrapped Mahi-Mahi on Paleo Bread.”  Julian Bakery makes this happen with an incredible Paleo cookbook called The 30 Day Guide to Paleo Cooking.  So many great Paleo jam packed into this well made cookbook.  With beautiful photos, great Paleo tips, and of course many lovely meals, you can’t go with this purchase!

Tonight we decided to try their “Bacon Wrapped Mahi-Mahi”, and sandwich it in between some almond Paleo Bread; the only bread that I will consume… Being strict Paleo means that you value how you feel, you want the best foods for your body, and normally bread is out of the picture.  But once you’ve learned that Paleo Bread is made with coconut and/or almonds, along with some other healthy ingredients, that’s when the light bulb goes off…. Ahh, they aren’t using the so-called “healthy grains”, no GMO-wheat, and none of the yeast, soy, or gluten which we are trying to give the pass to.  Yes, a bread that promotes low-inflammation, a happy body and a happy gut, and also low carb and low calorie too. 

Ingredients (for the BBQ Blend Spice Mix):

  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chipotle powder
  • 1 tsp cinnamon
  • 1 tsp coriander
  • 1 tsp black pepper

Ingredients (for the Bacon Wrapped Mahi-Mahi)

  • 1.5 lbs Mahi-Mahi
  • BBQ Blend Spice Mix (see above)
  • 4 strips bacon

Directions:

1)      Preheat the oven to 425F

2)      Rinse the Mahi-Mahi under cold water, and pat dry.

3)      Cut the Mahi-Mahi into four equal portions.

4)      Season each filet with the BBQ Blend Spice Mix.

5)      Wrap each filet with a strip of bacon, and top with additional Himalayan Salt and pepper to taste.

6)      Bake the filets in a baking dish for 25-30 minutes until the fish easily flakes.

7)      Toast/Grill Paleo Bread to your liking, and serve Bacon Wrapped Mahi-Mahi in Paleo Bread, and top with avocado slices.

Cook Time:

• 25 minutes

Now that we’ve established that Paleo Bread is the official bread of Cavemen (I made that up, but it would have been!), and it’s the only valid choice out there if you are serious about your health and wellness….  We now can discuss the meal itself.  It. Was. Insanely. Good!!!!!!!!!!!  The bacon and that spice blend served its purpose, but didn’t overpower the Mahi-Mahi.  It added a nice smoky flavor, and with the creaminess of the avocado teamed up with the crisp almond Paleo Bread, I was lovin’ each and every bite!

Thanks to Julian Bakery’s website where I was able to find tons of Paleo-ness, from their Paleo Bread to their healthy and nutritious Himalayan Salt, and the superb cookbook, we’ve been taking healthy to another level.  The hardest part of a meal like this is making sure you have the freshest, wild-caught Mahi-Mahi available, otherwise Julian Bakery has you covered!
