Bacon Eggs & Paleo Waffles Recipe

Here’s a personal favorite…  A meal that I’ve loved for years and years, and hopefully you will too!  This is Dan from Primal4Life bringing you “Bacon Eggs & Paleo Waffles.”  Ever since I was a kid, I’ve always been into dipping, and mixing foods together.  Waffles drenched with egg yolk seemed to hit the spot every time!  So eventually I started layering the eggs in between the waffles, which is what I have done today.  Except, these waffles are grain free, gluten free, soy free, and also low in the carb department!  One Paleo Waffle has just 8 Net Carbs, along with a whopping 20g protein, and 12g of Fiber.  Plus, they are delicious, soft, and thick (Belgian style).

Gone are the days where you just bought waffles, whatever was in the store…  Now we have a choice!  We can be aware of what’s actually in our foods…  Paleo Waffles are made with coconut flour, almond milk, egg whites, coconut oil, stevia, cinnamon and even sea salt instead of traditional table salt.  Compare that to your “off the shelf” waffles, or even a “gluten-free” waffle.  Remember, anything without gluten is gluten free, it doesn’t mean that it’s healthy for you!  To have the Paleo stamp of approval means low inflammation, high nutrient, and good for you.  And you don’t have to be Paleo in order to enjoy Paleo if you catch my drift.



1)      Toast Paleo Waffles

2)      Cook eggs and bacon to your liking, using Nuco Coconut Oil (I went with sunny-side-up)

3)      Season eggs and bacon with salt

4)      Plate ½ Paleo Waffle, then eggs and bacon, then top with the other Paleo Waffle

5)      Top with Nature’s Hollow Maple Syrup

I am really in love with this sugar free maple syrup that Julian Bakery has been offering… It’s sweetened with Xylitol, which is a 5-carbon sugar alcohol that is ideal for diabetics as well as anyone concerned about their sugar intake.  These days, everyone needs to be concerned about their sugar intake if you ask me!  Nature’s Hollow Maple Syrup is low glycemic, is very low in carbs, has no sugar, and is low in calories too!  Plus, you’re going to find this hard to believe, but it’s actually good for your teeth and gums!  Xylitol has many health benefits, which I did not know until I wondered why this particular maple syrup used Xylitol in it….  Ear infections reduced, improved bone strength, and Xylitol is the only sugar that doesn’t feed Candida.  Plus, it tastes great!!!!!!!!  A quick sample just prior to pouring it onto my Paleo Waffles and I was hooked.
